Pork Loin with Cinnamon Rub

  • Rub:
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon cinnamon
  • Pork Loin
  • Olive oil
  • 1 cup brown sugar

Preparation

Step 1

Cover pork loin with the rub and put it in a skillet on top of the stove with about two tablespoons olive oil. Brown it on all sides.

Place loin in an oven proof baking dish or Dutch oven.

Add 1 cup brown sugar to the skillet of drippings; heat until dissolved. (Reserve some of this sauce for serving.)

Dip sauce over the top of the pork loin and put it in the oven at 350 degrees for 25 minutes; turn, baste, and bake for 25 more minutes; turn baste and bake for 25 more minutes.

(It may start to burn in the bottom of the baking dish; if so, double wrap in heavy foil, put more sauce over it and put back in oven until there is no more pink in middle.)

Slice the pork loin at an angle. Drizzle the reserved sauce back and forth on serving platter and placed the pork loin on the platter.

Serve with twice-baked potato and hot rolls.
