- 1 1/2 pounds center-cut salmon filet, skin-on (I buy it already smoked from Fresh Market
- 1 cup cooked quinoa
- 1 large egg, beaten
- 1/4 cup chopped green onion, green part only
- 1 slice of Ezekiel bread made into bread crumbs
- Zest of 1 lemon
- 1 teaspoon coarsely ground pepper
- 1 teaspoon salt
- 2 tablespoons coconut oil
- Lemon wedges, for serving
Ice Cream Pie with Easy Caramel Sauce (Pioneer Woman)

For the crust: Preheat the oven to 350 degrees F
- 18 graham crackers (the 4-section large pieces)
- 1/3 cup butter, melted
- 2 pints vanilla ice cream
- 1/4 cup finely chopped pecans, plus extra for serving
- 4 peanut butter cups, roughly chopped
- 2 large chocolate-covered peanut butter crunch candy bars, such as Butterfinger, roughly chopped
- 1 cup packed brown sugar
- 1/2 cup half-and-half
- 4 tablespoons (1/2 stick) butter
- Pinch of salt
- 1 tablespoon vanilla

- 1 pound Ground Chuck
- 5 cups Bow Tie Noodles
- 3 cups Spaghetti Sauce (or Pizza Sauce, Whatever You Prefer)
- 1 Tablespoon Olive Oil
- 1 teaspoon Salt
- 1/2 teaspoons Garlic Powder
- 1 teaspoon Italian Seasoning (or More, Make It To Your Taste)
- 1/2 cups Mozzarella Cheese
- 1/2 cups Sour Cream
Salsa Ranchera - Trisha Yearwood

In a skillet, cook the bacon until done but soft, not crisp
- 6 slices bacon, cut into 1/4-inch slices
- 4 medium tomatoes, finely diced
- 2 serrano peppers, de-stemmed, de-seeded and finely diced
- 1 medium onion, finely diced
- 1 clove garlic, minced
- 1/2 teaspoon cumin
- 1/2 teaspoon salt

- 2 pounds parsnips, peeled and cut into 3-inch pieces, halved or quartered if large
- 5 T extra-virgin olive oil, divided
- 4 sprigs fresh thyme
- coarse salt and ground pepper
- 1 small head escarole, leaves torn (about 7 cups) or can use Romaine
- 1/2 cup chopped dates (preferably Medjool)

- 2 boneless skinless chicken breasts
- 2 10oz cans of Ro-Tel (I like the lime & cilantro, but the regular is fine)
- 1 can black beans, rinsed and drained
- 1 can kidney beans, rinsed and drained
- 1 can corn or two cups frozen corn
- 1 onion, chopped
- 2 14.5oz cans low-sodium chicken broth
- 1-2 cups of water
- 1 Tbsp garlic powder*
- 1 Tbsp chile powder*
- 1 Tbsp ground cumin*
- 1 Tbsp dried cilantro*
- tortilla chips
- sour cream
- shredded cheddar or Mexican blend cheese
- fresh cilantro
- Instead of these spices, you could include a packet of Taco seasoning if you prefer.*
