BBQ Pork Tenderloin

Place pork tenderloin into a large zip top bag
- 1 3-4 pound pork tenderloin
- 1/2 cup BBQ Sauce
- 1/4 cup grape jelly
- 2 tablespoons Sriracha Sauce
- 2 tablespoons Worcestershire Sauce
- 1 clove garlic, minced
- 1 teaspoon ground black pepper

Combine everything but dressing; let sit in fridge overnight
- OPTIONAL Dressing:
- 1 can of black beans, drained
- 1 can of purple-hull peas, drained
- 1 can of corn, drained
- 1/2 c salsa (optional)
- 2 cans Rotel tomatoes, drained
- 1 red onion, chopped fine
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1 orange pepper, chopped
- 1/2 c cilantro, chopped
- 1 T sugar
- 1 tsp black pepper
- 1 tsp salt
- 1 chopped avacado
- 1 tablespoon olive oil
- 1 tablespoon white wine vinegar
- 1/2 lime, juiced
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste
Pumpkin Pie Cupcakes

Preheat oven to 350 degrees
- 1 15 oz can pumpkin puree
- 1/2 cup sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup evaporated milk
- 2/3 cup all purpose flour
- 2 teaspoons pumpkin pie spice
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
Oat and Fruit Protein Shakes

My husband and I split this shake for breakfast
- 1/2 cup old-fashioned oats
- 1 1/2 cups frozen blueberries (or sliced peaches)
- 2/3 cup goat milk
- 1/3 cup fat free half & half
- 3 packets of real Stevia
- 1 scoop of vanilla whey protein powder
- 1/4 cup cottage cheese
- 1/4 teaspoon pure vanilla extract
- 1/4 teaspoon ground cinnamon (increase to 1/2 teaspoon if using
- peaches)

Preheat the oven to 375 degrees
- 6 whole Deli Rolls Or Crusty Italian Rolls
- Jarred Marinara Sauce Or Pizza Sauce
- Jarred Or Refrigerated Pesto
- 2 pounds Mozzarella Cheese, Grated
- Grated Parmesan Cheese To Taste
- 2 Tablespoons Butter
- 1 whole Onion, Sliced
- 1/2 pound Sausage (regular Breakfast Sausage Or Italian Sausage)
- Pepperoni Slices
- Canadian Bacon Slices
- Pineapple Chunks, Fresh Or Canned
- Roma Tomatoes, Sliced
- Sliced Black Olives
- Optional Ingredients: Goat Cheese, Sliced Bell Peppers, Various Cheeses, Pepperoncinis, Jalapeno Slices, Diced Red Onion, Any Other Pizza Topping You'd Like!
Cranberry-Avocado Salad with Candied Spiced Almonds and Sweet White Balsamic Vinaigrette

For the dressing; Combine all ingredients in a pint sized glass jar and shake well to dissolve sugar
- Ingredients for the dressing:
- 1/2 cup (60g) sugar
- 1 1/2 tablespoons poppy seeds
- 1 1/2 tablespoons sesame seeds
- 1 teaspoon paprika
- 2 teaspoons dried mustard
- 1 tablespoon minced sweet onion
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- 1/2 cup (120 ml) white balsamic vinegar
- 1/3 cup (70 ml) vegetable oii
- 1/3 cup (70 ml) extra virgin olive oil
- Ingredients for the salad:
- 12 ounces (340g) baby spinach, arugula, field greens
- 1 small bunch cilantro, washed and dried, leaves removed whole from stems (discard the stems or use for another recipe)
- 2 medium avocados, peeled and halved
- 1 1/2 cup (115g) dried cranberries
- 1 1/2 cup (115g) Candied Spiced Almonds (see recipe)
- Ingredients for the almonds:
- 5 cups (600g) sliced almonds, or a 1 pound package
- cup (100g) sugar
- 3 tablespoons butter
- 2 teaspoons cinnamon
- 1 teaspoon cumin*
- 1-1 1/2 teaspoons smoked paprika* – some smoked paprikas are quite hot, if you don’t like “hot”, just use 1 teaspoon and they will be mildly spiced.
- 1 teaspoon vanilla
- sea salt
- The cumin and the smoked paprika give just a hint of mysterious, delicious flavor – even though these are savory spices, these almonds are still wonderful served with sweets like ice cream or yogurt.
Spicy Pop Pulled Pork

- 2 onions, peeled and quartered
- 1 whole pork butt or pork shoulder roast
- salt & pepper
- 1 11 oz. can chipotle peppers in adobo sauce
- 2 cans pop (Coke, Pepsi, Dr. Pepper or Root Beer)
- 4 packed T brown sugar
Hot Cocoa Mix

Mix all the ingredients together in a large bowl
- 4 cups nonfat dry milk powder
- 1 1/2 cups sugar
- 1 cup non-dairy coffee creamer
- 2/3 cup unsweetened cocoa powder
- 1 (4 ounce) package instant chocolate fudge pudding
Rice Cooker Risotto (Use microwave rice cooker.)

Heat olive oil in medium skillet over medium heat
- 1 T olive oil
- 8 oz. baby portabella mushrooms
- 1 1/2 T butter, melted
- 1 cup Arborio rice
- 1 onion, chopped
- 1 small clove garlic, minced
- 1/4 cup dry, white wine
- 2 1/4 cups chicken broth; divided use
- 1/2 t kosher salt
- 1/4 t black pepper
- 1/4 c grated Parmesan cheese; reserve 1 T for garnish
- 1/3 cup frozen peas, thawed
- 1/2 T butter

- 1 1/4 cup ripe bananas, mashed
- 1 teaspoon lemon juice
- 1 3/4 cup flour
- 1 cup sugar
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup brown sugar, packed
- 2 eggs
- 1/3 cup buttermilk
- 1/4 cup oil
- 1/4 cup apple sauce
- 2 teaspoons vanilla extract
- 1 cup chopped walnuts or chocolate chips, optional
