Sausage, Cheese and Onion Panini

Great sandwich
Great to improve chicken and turkey sausage
Ingredients
- 3 tablespoons olive oil
- 1 tablespoon butter
- 2 large yellow or valdalia onions thinly sliced
- 1/4 cup apple brandy (or liqueur)
- salt and pepper to taste
- 4 cooked sausages (polk, chicken, turkey)
- Dijon mustard
- 4 oz Gruyere cheese thinly sliced
- 8 1/2 -inch thick slices of french bread (or the like)
- 1/4 teaspoon fresh thyme

Preparation
Step 1
Grill or cook the sausages
Thinly silce the onions and caramelize them in the butter, olive oil and 3 tablespoons of the brandy (or liqueur) over medium high heat. Salt and pepper to taste. When caramelized add the remaining one tablespoon of brandy and the thyme to the onions and cook 1 minute more over medium-low heat.
Put Dijon mustard on one side of each slice of bread. Add a serving of onions and sliced Gruyere Cheese.
Cut the sausage lengthwise and put on the bread with the cheese and onions.
Put the top half of bread on the sandwich and spray with olive oil on both sides and put in a panini (or press) grill.
Grill until bread is golden brown and the cheese melts.
