Pan Sauteed Salmon with Mustard Glaze and Rice

Sauce: Melt butter, brown sugar, and honey in a small sauce pan over medium heat
- Mustard Glaze:
- 2 T butter
- 3 T brown sugar
- 1 T honey
- 1/4 cup Dijon Mustard
- 2 T soy sauce
- 1 T EVOO
- 1 T sweet chili sauce (I use Mae Ploy)
- Salmon:
- 4 six-ounce salmon filets
- 1 T butter
- 1 T EVOO
- Salt and Pepper
- 3 T white wine
- 1 T chopped fresh parsley for garnish
- Rice:
- Prepare your favorite kind of rice; stir in some pineapple bits and soy sauce and heat through.
Shrimp and Linguini

Combine shrimp, ½ teaspoon salt, and pepper, tossing to coat shrimp
- 2 pounds large shrimp, peeled and deveined
- 4 teaspoons kosher salt, divided
- 1 teaspoon freshly ground black pepper
- 1 Tbsp minced garlic
- Cooking spray
- 1/2 teaspoon grated lemon rind
- 3 tablespoons fresh lemon juice
- 3 tablespoons butter
- 6 quarts water
- 8 ounces uncooked gluten-free quinoa linguine
Crunchy Sweet Hot Garlic Dill Pickles

Adapted from a recipe in Simply Canning
- 8 lbs of 3-4 inch pickling cucumbers
- Garlic cloves (1 per jar)
- Jalapeno peppers (to taste per jar)
- 2 gals water
- 1 1/2 cups canning or pickling salt
- 2 qts vinegar (5 percent)
- 4 cups sugar
- 2 quarts water
- 2 T whole mixed pickling spice
- Whole mustard seed (1 tsp per pint jar)
- Dill seed (1 tsp per pint jar)
Dill Dressing

- 1 cup sour cream
- 2 tablespoons white vinegar
- 2 tablespoons sugar
- 1 teaspoon fresh dill (or you can use dried)
- 1/4 teaspoon salt

Easy Chicken Chili

- 3 cans great northern beans
- 2 pounds chicken breasts, cooked and cubed
- 1 tablespoons olive oil
- 4 garlic cloves, minced
- 2 onions, chopped
- 2 teaspoons ground cumin
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground chipotle pepper
- 1 teaspoon ground oregano
- Salt and pepper
- 2 (4-ounce) cans green chilies, chopped
- 4 cups chicken stock or broth
- 12 ounces Monterey Jack cheese, grated
- Sour cream
- Jalapeno peppers, chopped
- Doritos, optional

This Oatmeal Cookie Shake is like eating an oatmeal cookie blended up into a thick creamy milkshake!
- 1/2 cup fat free cottage cheese
- 1 scoop protein powder—chocolate or vanilla
- 1 to 3 packets Stevia
- 5 to 10 ice cubes, depending on how thick you like it
- 1/2 to 1 cup fat free milk—almond or goat
- 2 tablespoons old fashioned oats
- 1 tablespoon cocoa powder, or 1 tablespoon chocolate chips
- 1/8 teaspoon cinnamon
- 1/2 teaspoon vanilla or almond extract

- Dressing:
- 1 pkg. cut up cabbage for slaw (grocery store)
- 1 cup of miracle whip or mayonnaise
- 4 Tbs. sugar
- 2 Tbs. vinegar
- Paula Dean’s seasoning to taste (salt, pepper, garlic powder)
- 1 cup salt
- 1/4 cup black pepper
- 1/4 cup garlic powder
- Mix ingredients together and store in an airtight container for up to 6 months.
- Optional: Add onion powder to your liking.
