Vegetable Beef Rice Soup - Instant Pot

Preheat the pressure cooking pot using the browning or sauté setting
- 1 lb. lean ground beef
- 1 tablespoon oil
- 1 large onion, diced
- 1 rib celery, chopped
- 3 cloves garlic, finely chopped or pressed
- 2 14-ounce cans beef broth
- 1 14-ounce can crushed tomatoes
- 1 12-ounce bottle Original or Spicy Hot V8 juice
- 1/2 cup long grain white rice
- 1 15-ounce can beans, drained and rinsed (I use great northern)
- 1 large potato, peeled and diced into 1-inch pieces
- 2 carrots, peeled then sliced into thin coins
- 1/2 cup frozen peas, thawed
- salt and pepper
BBQ Chicken Dip

Preheat oven to 375 degrees
- 2 (8-ounce) packages cream cheese, softened
- 1/4 cup BBQ Sauce
- 1/2 teaspoon garlic powder
- 1 1/2 cups finely chopped chicken
- 1/3 cup corn
- 1/3 cup black beans
- 2 green onions, sliced
- 1/2 cup shredded Pepper Jack cheese
- 1/2 cup shredded Cheddar cheese
- 1/4 cup chopped red onion
- extra BBQ sauce to drizzle on top
Oatmeal Pancakes

In a blender, blend all ingredients until smooth
- 6 egg whites
- 1 cup rolled oats, dry
- 1 cup cottage cheese
- 2 teaspoons sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
Honey-Mustard Salad Dressing

In a small bowl, combine honey and mustard
- 3 tablespoons honey
- 2 tablespoons Dijon mustard
- 1/4 cup cider vinegar
- 1/2 cup canola oil
Taco Soup

- 1 pound ground meat
- 1 can whole kernel corn
- 1 can ranch style chili or pinto beans
- 1 can hominy
- 1 can rotel tomatoes - diced
- 1 can Glen Muir fire roasted tomatoes
- 1 package taco seasoning
- 1 package dry ranch dressing mix
Crack Chicken - Instant Pot

Turn instant pot to saute mode on high and once it says 'Hot', add diced bacon and cook until done
- 1 onion, chopped
- 2 cloves garlic, minced
- 6 pieces bacon, diced raw
- 4 chicken breasts
- 1 cup chicken broth
- 1 T package ranch dressing mix
- 12 oz cream cheese
- 2 cups shredded cheddar cheese
- big handful of chopped green onions
Potato and Corn Soup - Instant Pot

Set the pot to Saute' medium and melt butter
- 2 T butter
- 5 potatoes roughly chopped
- 1 onion, chopped
- 2 celery stalks, chopped
- 2-3 cloves of roasted garlic, chopped
- 1/4 tsp red pepper flakes
- 4 cups of chicken broth
- salt and cracked pepper to taste
- 1 cup cream or half and half
- 1 can cream style corn

- 1 whole roasting chicken (3 to 4 pounds)
- Sea salt and freshly ground black pepper
- 4 tablespoons (1/2 stick) butter
- 1 tablespoon olive oil
- 1 cinnamon stick
- 2 whole pieces star anise
- 1/2 cup roughly chopped cilantro stems
- 1 large lemon, cut into eighths
- 1 stalk lemongrass, 5 inches of white part only, chopped into 1/4-inch pieces
- 6 to 8 garlic cloves, peeled and smashed
- 1 (16-ounce) can coconut milk
- 3 cups torn greens (spinach, kale, chard, mizuna, etc)
- 2 green onions, chopped into 1/4-inch pieces
- Chopped cilantro, to garnish

- 2 cups Mediterranean-style mixed salad greens
- 2 tablespoons sun-dried tomatoes (packed in olive oil), chopped

- 2 tablespoons grated Parmesan, plus more for garnish
- Pinch salt
- Pinch freshly ground black pepper
