"Fried" Onion Rings-Baked

Preheat oven to 450 degrees F
- Nonstick cooking spray
- 1/4 cup refrigerated or frozen egg product, thawed
- 2 tablespoons buttermilk
- 3/4 cup panko (Japanese-style bread crumbs)
- 1/4 teaspoon Cajun seasoning, blackened seasoning, or barbecue seasoning
- 1 large sweet onion (such as Vidalia or Walla Walla), cut into 1/4-inch-thick slices and separated into rings
Baked Apple/Strawberry Rhubarb Cobbler

This rhubarb cobbler recipe can be made with either apples or strawberries
- TOPPING:
- 4cups4 cups fresh or frozen rhubarb, chopped
- 2cups2 cups apples or strawberries, peeled and diced
- 1/4cup1/4 cup liquid honey
- Grated zest of 1 orange or lemon
- 11 egg
- 1cup1 cup milk
- 1/2cup1/2 cup butter, melted
- 1/3cup1/3 cup liquid honey
- 1/4cup1/4 cup orange or lemon juice
- 1 1/2cups1 1/2 cups whole wheat flour
- 1/2cup1/2 cup toasted walnuts or hazelnuts, chopped
- 1tablespoon1 tablespoon baking powder
- 1/2teaspoon1/2 teaspoon baking soda
- 1/4teaspoon1/4 teaspoon salt
Triple Ginger Nectarine Jam

Fill a large pot with water, cover and bring to a boil
- Three 1/2-pint canning jars with lids and rings
- 2 1/2 pounds firm-but-ripe nectarines
- 1 1/2 cups sugar
- 2 tablespoons fresh lemon juice
- 2 tablespoons minced candied ginger
- 1 tablespoon finely grated fresh ginger
- 2 teaspoons ground ginger
Bacon Brussels Sprouts

Fry the bacon in a skillet
- 1 lb. Brussels sprouts, trimmed, cores cut off and halved vertically or quartered if very large
- 4 slices bacon (1/4 pound)
- 1 TB. apple cider vinegar
- 1 TB. honey mustard (2 tsp. brown mustard + 1 tsp. honey)
- 1/2 tsp. THYME
- 1/4 tsp. PENZEYS FRESHLY GROUND PEPPER
- 1/4 tsp. salt, optional
Hummingbird

In a blender, combine rum cream liqueur, coffee liqueur, milk and strawberry syrup
- Original recipe makes 1 serving
- 1 fluid ounce rum cream liqueur
- 1 fluid ounce coffee flavored liqueur
- 1 fluid ounce milk
- 1/2 fluid ounce strawberry flavored syrup
- 1/2 banana
- 1 cup crushed ice

Heat the oil in a 10-inch skillet over medium heat
- 1 tablespoon vegetable oil
- 1 medium onion, chopped (about 1/2 cup)
- 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup
- 1/2 cup milk
- 1 package (10 ounces) frozen peas and carrots
- 2 cups shredded or cubed cooked turkey or chicken
- 1 package (10 ounces) Pepperidge Farm® Puff Pastry Shells, prepared according to package directions
Triple-Orange Pecan Biscotti

These twice-baked Italian cookies smell divine and are delicious eaten by themselves or dunked into hot tea or coff...
- 12 oz. (2-2/3 cups) all-purpose flour
- 1-1/2 cups granulated sugar
- 2 tsp. baking powder
- 3/4 tsp. table salt
- Finely grated zest of 2 oranges (to yield a scant 1/4 cup lightly packed)
- 4-1/2 oz. (1 cup) coarsely chopped pecans
- 3 large eggs, at room temperature
- 5 Tbs. olive oil
- 2 Tbs. fresh orange juice
- 1 Tbs. orange liqueur, such as Grand Marnier
Peanut Butter Chocolate Fondue

In a heavy saucepan, cook and stir the chocolate chips, sugar, milk and peanut butter over low heat until smooth
- 1 cup (6 ounces) semisweet chocolate chips
- 1/2 cup sugar
- 1/2 cup milk
- 1/2 cup creamy peanut butter
- 4 large firm bananas, cut into 3/4-inch slices
- 1 pint whole strawberries
Coconut Shrimp With Orange Marmalade Dipping Sauce

In a large bowl, combine coconut and bread crumbs and season with salt and pepper
- Dipping Sauce:
- 2 cups sweetened flaked coconut
- 2 cups breadcrumbs
- kosher salt
- fresh ground black pepper
- 2 cups all-purpose flour
- 4 large eggs, beaten
- 24 large shrimp, peeled and deveined
- vegetable oil, for frying
- 1/2 cup orange marmalade
- 1-2 tablespoon dark rum

- 1 cup blanched almond flour
