  • 100 g (1/2 cup) dark muscovado sugar (brown sugar)
  • 250 g golden syrup (2 parts light corn syrup and 1 part molasses or equal parts of honey and light corn syrup)
  • 1 tsp bicarbonate of soda (baking soda)
  • 2 eggs, beaten
  • 300 g (2-2 1/2 cups) rhubarb, cut into short lengths
  • icing sugar, for dusting
