Mocha Scones

For the Scones: Adjust oven rack to lower-middle position and preheat oven to 400 degrees
- For the Scones:
- 2 1/4 cups all-purpose flour
- 1/3 cup sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 8 tablespoons unsalted butter, frozen
- 1 cup semisweet chocolate chips
- 1/2 cup sour cream
- 1/2 cup strong coffee, room temperature
- 1 large egg
- For the Mocha Glaze:
- 1/4 cup strong coffee
- 1 1/2 cups confectioners’ sugar
- 2 ounces unsweetened chocolate, melted

Over medium heat, combine half and half, milk, and chocolate in a saucepan for five minutes

English Hasty Pudding

Put 25 g (1 oz) of the butter, the flour and milk in a saucepan
- 50 g (2 oz) butter
- 30 ml (2 tbsp) plain flour
- 450 ml (3/4 pint) fresh milk
- 1 egg
- Freshly grated nutmeg or ground cinnamon
- 40 g (1 1/2 oz) light soft brown sugar
Mini Strawberry Claufoutis

- 1 pint strawberries, cleaned, hulled and halved
- 1 cup milk
- 1/2 cup heavy cream

- 4-1/2 cups (1-inch cubes) potatoes
- 1 cup Canadian bacon, cut in 1/2-inch dice
- 3/4 cup chopped red bell pepper
- 1/4 cup chopped chives or green onions
- 2 cloves garlic, minced
- 1 tsp. dried basil leaves

Philly Cheese Steak Pizza

Position a rack in the center of the oven and preheat the oven to 475ºF
- SAUCE:
- 1 tablespoon butter
- 1 tablespoon flour
- ½ cup cold milk
- 1-3 cloves garlic, pressed
- 1/8 teaspoon salt
- a pinch of black pepper AND nutmeg
- ¼ cup parmesan cheese
- PIZZA:
- ½ recipe homemade pizza dough (store bought works too)
- 6 ounces of cooked ribeye, skirt,or flank steak, or roast beef (see notes for cooking instructions)

- 3-5 mushrooms sliced
- ½ sweet onion, thinly sliced
