Pulled Pork Soup

- 4 slices bacon, chopped
- 1 onion, chopped
- 4 cloves garlic
- 3 tablespoons tomato paste
- 4 teaspoons smoked paprika
- 1 tablespoon Creole seasoning
- 1 tablespoon chili powder
- 1 tablespoon vegetable oil
- 3 pounds bone in country style pork ribs
- 1/4 cup apple cider vinegar
- 2 tablespoons molasses
- 1 (14 oz) can fire roasted tomatoes
- 4 cups chicken broth
- 1 (15 oz) can great Northern beans, drained
Zucchini Casserole

Preheat oven to 350°. Boil or steam the zucchini slices until just tender, about 2 minutes
- 6-8 Cups sliced zucchini (about 3 medium, 6 small)
- 2 TB. butter, room temperature
- 2 TB. flour
- 1-2 tsp. 4/S SEASONED SALT, FORWARD!, ENGLISH PRIME RIB RUB or MURAL OF FLAVOR
- 1 egg
- 1/4-1/2 tsp. PENZEYS FRESHLY GROUND PEPPER, to taste
- 1/4-1/2 Cup Parmesan cheese
- 1/2 Cup bread crumbs
Pulled Pork Enchilada's

Preheat oven to 350 degrees
- 2 cups shredded cooked pork
- 1 (10 oz) can enchilada sauce
- 1/2 cup milk
- 1 cup sour cream
- 1 (4 oz) can chopped green chilis
- 2 cups shredded colby-jack cheese
- 1 can condensed tomato soup
- 1/4 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 6 (7 inch) flour tortillas
Kim's Quiche

Preheat oven to 425 Put cheese, broccoli and bacon in pie shell
- Preheat oven to 425
- 1 deep dish pie shell
- 8 oz. shredded cheddar
- broccoli, blanched
- 6-8 strips cooked, crumbled bacon
- 4-6 eggs, beaten
- 3/4 cup sour cream
Brisket in Smoker

Place the brisket in a foil or ceramic roasting pan
- Seasoning Paste:
- 1 12-lb. brisket
- 1/2 Cup Dijon-style mustard
- 1/2 Cup dark brown sugar
- 2 cloves fresh garlic, minced
- apple juice
- Rub:
- 1/4 Cup HUNGARIAN-STYLE SWEET PAPRIKA (if roasting in the oven, use 2 TB. SMOKED SPANISH PAPRIKA and 2 TB. HUNGARIAN-STYLE SWEET PAPRIKA)*
- 3 TB. GRANULATED GARLIC POWDER
- 3 TB. CELERY SALT
- 2 TB. salt
- 2 TB. packed brown sugar
- 2 TB. GROUND CUMIN
- 2 TB. MEDIUM HOT CHILI POWDER
- 2 TB. sugar
- 1 TB. MEXICAN OREGANO
- 1 TB. FRESHLY GROUND BLACK PEPPER
- 1 TB. FRESHLY GROUND WHITE PEPPER
- 2 TB. CAYENNE PEPPER (for oven 2 TB. CHIPOTLE SMOKED PEPPER)*
- Mop Sauce:
- 1 qt. apple juice or cider
- 1 Cup cider vinegar
- 1 TB. salt
- 4 Cups (or more) oak/mesquite chips or chunks, soaked in water for 4 hours (the Culps like to use mesquite chunks and place 3 or 4 on the charcoal at a time)
Burrito Pie

Heat the beef or veggie crumbles in oil, drain and add taco seasoning
- 2 Tablespoons olive oil
- 1 pound ground beef or one 16 oz package veggie crumbles
- 1 to 2 teaspoons taco seasoning
- 4 whole wheat burrito wraps
- 1 can spicy refried beans or unseasoned beans with 2 teaspoons
- 1 cup shredded cheddar cheese

- 1 stick butter, softened
- 2 cups shredded cheddar cheese

- 2 1/2 - 3 cups milk (roughly equal to the volume of eggs)
- 1/4 teaspoon salt
- 1 -2 teaspoons Mural of Flavor seasoning
- 1/2 pound cooked, crumbled bacon

- 1 cup thinly sliced mushrooms
- 1 cup diced, cooked, vegetables like bell peppers,broccoli or peas
