Jamaican Beef Patties

Adapted from Eating Well Magazine
- Crust:
- 2 1/4 cups all-purpose flour
- 1 tsp ground turmeric
- 1/4 tsp baking powder
- 4 tablespoons cold sweet butter
- 5 tablespoons olive oil
- 1/3 cup ice water
- 1 egg yolk
- Filling:
- 8 ounces lean ground beef
- 1 bunch scallions – chopped
- 1 tsp Jalapeño pepper
- 1/4 cup breadcrumbs
- 1/4 cup water
- 1/4 tsp dried thyme
- 1/4 tsp ground turmeric
Harvest Bundt Cake

Preheat oven to 350 degrees F
- For Bundt
- 3-4 carrots, peeled & grated
- 1 large (or 2 small) zucchini, peeled & grated
- 1 large (or 2 small) apple, peeled & grated
- 3/4 cup white sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1 teaspoon vanilla
- 1/2 cup canola oil
- 1/2 cup whole milk
- 2 cups self-rising flour
- For Icing Drizzle
- 2 cups confectioner's sugar
- 1 teaspoon vanilla
- 2-3 tablespoons milk
Spicy Chicken with Spaghetti

For spices: Combine all of the above ingredients in a small bowl and stir
- Spice Rub:
- 2 1/2 lbs. boneless chicken breast
- 1 lb. of your favorite spaghetti
- 1 tsp. curry powder
- 1 tsp. garlic powder
- 3/4 tsp. salt
- 1/2 tsp. black pepper
- 1 tsp. paprika
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- Veggies for the Spaghetti:
- 3 bunches of scallions - chopped
- 1 quart button mushrooms - sliced
- 1/2 red onion – sliced
- 4 cloves of garlic – chopped
- 1/2 cup fresh Italian parsley - chopped
- 1 tsp. lemon juice
- 1/4 - 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 tablespoons - Olive oil and a little extra for drizzling
Boneless Sautéed Chicken Thighs with Sage and Spaghetti

This is a good dinner to bring smiles to the ones you love
- Rub for Thighs:
- 7 boneless chicken thighs
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. hot curry powder
- 1/2 tsp. garlic powder
- Zest of 1 lemon
- 1 tsp. brown sugar
- 1/4 tsp. turmeric
- For the Sautéing:
- Handful of fresh sage
- 1 tablespoon of butter
- Slices of fresh lemon with the skin
- Olive oil for drizzling
- Sauce for the Spaghetti:
- Ingredients:
- 1 tablespoon capers
- Handful of fresh sage
- Handful of fresh basil
- 1/2 red onion – sliced thin
- 4 cloves of garlic – chopped
- Zest of one lemon
- Tablespoon of sliced marinated hot cherry peppers
- 1/4 cup wine
- 1/4 cup chicken broth
- 1 tablespoons butter
- Olive oil for drizzling
- 1 lb. of your favorite spaghetti
Key Lime Bars

Heat oven to 350 degrees F
- Crust:
- 1/2 cup all-purpose flour
- 1/2 cup (about 3 sleeves) graham crackers, crushed
- 1/2 cup rolled oats
- 4 tablespoons butter, chilled
- Key Lime Filling:
- 1 can (14 oz.) sweetened condensed milk
- 1/2 cup fresh lime juice
- Zest of 1 lime
- 2 cups whipping cream
- 1 teaspoon sugar
- Shredded coconut for garnish
Marinated Pork Salad

This is a cool and refreshing lunch or dinner
- Marinade:
- 1 lb. of leftover grilled boneless pork – sliced into thin strips
- Head of Romaine lettuce – cleaned and left whole
- 1 red onion – sliced thin
- 3 stalks of celery – sliced thin with leaves
- 1 grilled jalapeño – sliced with seeds
- Marinated sweet red peppers – sliced - with a little juice
- Dashes of red pepper flakes
- 1/4 tsp. of salt
- Dashes of black pepper
- Zest of 1 lime
- You may adjust this marinade to the amount of salad you are making.
- 1 tablespoon of sugar
- 1/2 tsp. of salt
- Juice of 2 limes
- 1/2 cup of red wine vinegar
Sweet Potato Soup with Creamed Spinach

Preheat Oven 375 degrees: Bake the sweet potatoes with the skin on until soft
- 4 sweet potatoes
- 1 red onion – diced
- 4-5 cloves fresh garlic – chopped
- 2 carrots – diced
- 9 oz. package frozen creamed spinach
- 6 cups chicken broth
- 1/4 cup fresh parsley – chopped
- 2 green tomatoes – diced
- 1 tsp. curry
- 1 tsp. dried oregano
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 cup milk
- 2 tablespoons olive oil
- Sour Cream
- Sweet Chili Relish
Chocolate Chip Pretzel Cookies

- 1 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 3/4 cup vegetable oil
- 1 1/2 cups self-rising flour
- 1/2 cup crushed pretzels
- 1/2 cup dark chocolate morsels
Classic Delicious Artichokes

- 4 artichokes
- 5 cloves garlic – chopped fine
- 1/2 cup grated Parmesan cheese or Romano cheese
- 1/2 cup Italian Parsley – chopped fine
