Summer Salad Wrap

This is a great treat for a cool summer meal
- Tortilla wraps
- Ground chicken
- Crispy bacon
- Shredded romaine or iceberg lettuce
- Mayonnaise
- Sweet pickles
- Crumbled Blue cheese
- Red Onion
- Fresh basil
- Honey
- Lemon juice
- Vinegar
- Red pepper flakes
- Ground cumin
- Olive oil
Beef and Bean Enchiladas

Adapted from: Women’s World Magazine
- 2 tablespoons olive oil
- 1 jalapeño pepper – diced with seeds
- 2 green bell peppers - sliced
- 1 lb. ground beef
- 1 cup sliced scallions
- 1/2 onion – sliced
- 3 cloves garlic – crushed and chopped
- 1- 15.5 oz. Can black beans – drained
- 1 1/2 cups shredded Jack cheese
- 1 cup chunky salsa
- 1/4 cup fresh cilantro – chopped
- 1 tsp. Chili powder
- 1 tsp. ground cumin
- 1 tsp. paprika
Honey Vanilla and Brown Sugar Ice Cream {No Churn}

Combine the honey and brown sugar and gently fold through the whipped cream mixture
- 16 oz. heavy cream or whipping cream
- 14 oz. can of condensed milk
- Pinch of salt
- 1 tsp. vanilla extract
- 1/4 cup brown sugar
- 3-4 tbs. honey
- JK Chocolate Micochip cookies or crumbled cookies of any kind
Fresh Tomato, Garlic, Rosemary and Feta Cheese with Spaghetti & Anchovy

This is so delicious; your praises will be sung
- Marinade:
- 2 quarts of grape tomatoes
- 4 cloves of fresh garlic – crushed and chopped
- 2-3 sprigs of fresh rosemary
- Dashes of Red Pepper flakes
- Olive oil – to cover the tomatoes
- Top the Spaghetti with:
- 1/2 cup fresh feta cheese
- 2 oz. can of anchovies - in oil
- 1 lb. of your favorite spaghetti
Tuna Salad w/ Buckwheat & Raisins

In a large bowl combine all the ingredients for the tuna salad
- Salad:
- 10 oz. solid white tuna in water
- 1 stalk celery, chopped
- 1/4 red onion, chopped
- 1/8 cup raisins, chipped
- 1/2 cup instant buckwheat barley
- 1 tablespoon fresh ginger, grated
- Dressing:
- Juice of 1/2 lemon
- 1 tablespoon soy sauce
- 1/2 teaspoon teriyaki sauce
- Juice of 1/4 orange
- 1 teaspoon vinegar
- Toast (optional)
Black Bean Salad

Prepare beans as directed on package
- Dressing:
- 1 stalk celery – chopped
- 3 cloves garlic – chopped
- 1/4 red onion – chopped
- 1/2 cup Italian parsley – chopped
- 1 cup of mixed pitted olives – chopped
- 2-3 red chili peppers – chopped
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper flakes
- 8 oz. of your favorite macaroni or couscous
- Juice of 1 lemon
- 3-4 tablespoons olive oil
Zucchini with Cannellini Beans and Macaroni

Heat a large frying pan with 2 tablespoons of olive oil
- 1 large zucchini – quartered and sliced
- 1/2 red onion – sliced
- 2 stalks celery – chopped
- 2 cloves garlic – chopped
- 1/2 cup Italian parsley – chopped
- 29 oz. can cannellini beans – drained
- 1 tbs. capers – plus tablespoon of caper juice
- Juice of 1/2 lemon
- 1 1/2 cups water
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 tsp. dried oregano
- 1/2 tsp. red pepper flakes
- 2 tablespoons olive oil – plus a little more for drizzling
- Grated Parmesan or Romano cheese
- 1 lb. of your favorite macaroni
Shrimp Fra Diavolo

This is such a satisfying, tasty and festive meal
- 2 lbs. Frozen Shrimp (thawed) or fresh
- 4 tablespoons olive oil
- 1 tablespoon dried oregano
- 1 tsp crushed red pepper flakes
- 4 scallions – chopped
- 1 bay leaf
- 1 onion – sliced
- 1 long hot pepper - chopped
- 4 cloves garlic – crushed & chopped
- 3 large tomatoes – chopped
- 1/4 cup fresh basil - ripped
- 1/4 cup fresh parsley – chopped
- 1/2 cup red wine
- 1 box favorite spaghetti
Peanut Butter Bites

Preheat Oven 350 degrees: Combine all of the dry ingredients in a bowl
- 1 cup peanut butter
- 1 cup vegetable shortening
- 1 cup brown sugar
- 1 cup sugar
- 2 cups oats
- 2 eggs
- 2 cups flour
- 1 tablespoon vanilla
- 1 tsp. baking soda
- 1 cup milk
Chocolate Birthday Cake

This cake is ultra light and delicious!
- 2 cups sugar
- 1 3/4 cups flour
- 3/4 cups cocoa powder
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs
- 1/2 cup milk
- 1/2 cup Bertolli Extra Light Tasting Olive Oil
- 1 tablespoon vanilla extract
- 1 cup strong hot coffee
- 1/2 pint of heavy cream for whipping
- Marinated pitted cherries – for between the cake layers or your choice of filling
- Powdered sugar – for dusting
