Garden Fresh Tomato Sauce & Spaghetti

- 7 About 7 Vine Ripe Tomatoes - quartered
- 1 bunch of fresh basil
- 4 – 5 cloves of garlic – crushed & chopped
- 1 Italian hot cherry pepper – sliced with seeds
- Dashes of Dried Oregano
- Olive oil – for drizzling
- Romano cheese for grating
- 1 lb. of - Your favorite Spaghetti
Fresh Tomato Veggie Soup

This is a simple and delicious soup that is so satisfying
- You will need:
- 1 large onion (diced)
- 1 green bell pepper (diced)
- 4 cloves garlic (chopped)
- 1 cup fresh parsley (chopped)
- 2 large tomatoes (chopped)
- 2 carrots (chopped)
- 2 stalks celery (chopped)
- 3 tablespoons olive oil
- 5 scallions (chopped)
- 1 tablespoon dried oregano
- 1/2 tsp red pepper flakes
- 1/2 tsp black pepper
- 3 cups water
- 1 cup of your favorite macaroni
- Grated Romano cheese for garnish
Maple Oatmeal Raisin Cookies

Preheat oven to 350 degrees F and line two baking sheets
- 1 1/2 cups AP flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 cup (1 stick) butter
- 1/4 cup brown sugar
- 1/4 cup white sugar
- 1 tablespoon maple syrup
- 1 egg
- 3/4 cup raisins
- 1/2 cup oats
'Skinny' Jelly Rolls

This flour-less sponge cake is light and airy
- 3 eggs, separated
- 1/4 cup (4 tablespoons) sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla
- 1/2 cup cottage cheese
- 2 tablespoons confectioner's sugar

- 1 cup ripe strawberries

Breakfast ~ Carrot Muffins

- 2 cups flour – sifted
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/4 tsp. salt
- 2 eggs – beaten
- 1/2 cup milk
- 4 tablespoons butter – melted
- 3/4 cup shredded carrots
- 1/4 cup raisins
Corn Bread Fritters

These are a great way to use up cornbread or muffins
- 1 corn bread – (about 5 x 8 loaf)
- 1/2 cup flour
- 2 eggs
- 1 cup milk
- 1 cup frozen whole kernel corn
- Vegetable oil for frying
Chickpea Dip

Combine all of these ingredients in a food processor and give a few good chops
- 19 oz. can of chickpeas – drained
- 1/2 small red onion
- 2 cloves garlic
- 1/2 jalapeño with seeds
- 3 tablespoons olive oil
- 3 tablespoons vinegar
- 1/2 tsp. cumin
- 1/2 tsp. black pepper
- 1 tsp. salt
- 1 tablespoon sugar
Yellow Squash with Fragrant Rice

This is a very easy and nice side dish
- For the Rice:
- 2 yellow squash – skinned and sliced
- 5 cloves of garlic – chopped
- 1 red onion – sliced
- Dashes of red pepper flakes
- Dashes of salt
- Olive oil
- Grated Romano
- 2 cups uncooked rice
- 1 tsp. brown sugar
- 1/2 tsp. curry powder
- Dash of turmeric
Chicken - Spinach Patties

Cube the chicken breast to prepare for the food processor
- Chicken and Spinach Patties:
- Ingredients:
- 3 lbs. boneless chicken breast
- 9 oz. box of frozen creamed spinach - thawed
- 2 cloves garlic
- 1/4 cup grated Romano or Parmesan cheese
- 3 tablespoons olive oil
- Vegetable oil for frying
- Your favorite toppings
- Your favorite bread
Light Fettuccini Alfredo

Heat a large frying pan with the olive oil
- For the Cream Sauce:
- 1 lb. of Fettuccini Noodles
- Golden Blossom Honey
- 16 oz. cottage cheese
- 1/2 cup grated Romano or Parmesan cheese
- 3/4 cup milk
- 1 tablespoon sugar
- 1/2 tsp. salt
- 1/4 tsp. red pepper flakes
- 3 cloves garlic
- 2 tablespoons olive oil
- For the Base of the Sauce:
- 1 cup of fresh basil – chopped
- Zest and juice of 1 lemon
- 3 cloves of garlic - chopped
- 4 tablespoons olive oil
- 1/4 tsp. red pepper flakes
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 2 tablespoons olive oil
- 1 cup of chick peas – drained
