Caponata Salad

Heat a large frying pan with 2 tablespoons olive oil
- 2 eggplants – peeled and cubed
- 2 stalks celery – chopped
- 4 cloves garlic – chopped
- 5 red bell peppers – roasted and sliced (seeds removed)
- 1 large onion – sliced
- 2 tablespoons – capers plus 2 tablespoons caper juice
- 3 tablespoons olives – your choice (pitted)
- 1/4 cup raisins
- 1/2 jalapeño – chopped with seeds
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper flakes
- 1/2 tsp. dried oregano
- 4 tablespoons olive oil
- 1/4 cup vinegar plus 1/2 tsp. salt and 1 tablespoon sugar
Ricotta Cheese Pie with Cream Cheese (Adapted from Richard Simmons Deal-A-Meal)

- For the Crust:
- 8 tablespoons of butter
- 1/2 cup of sugar
- 1 cup of Graham cracker crumbs (about 4 – 5 sheets of graham crackers)
- For the filling:
- 3 eggs
- 9 ounces of part-skim Ricotta cheese
- 8 ounces of cream cheese
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1 tsp baking powder
- 1 tsp vanilla
- 1/4 tsp grated lemon peel
- 1/4 tsp grated orange peel
- 1 tsp lemon juice
- Topping for pie:
- 1/4 cup almonds
- 1/4 cup graham crackers (about 2 sheets of graham crackers)
Chicken in a Salad with Grilled Peppers

This is a wonderful light lunch or dinner
- 1 bunch of your favorite salad greens
- 1 red onion – sliced
- 2 bell peppers – sliced
- 1/2 lb. of bacon – sliced (reserve a few tablespoons of the bacon fat for drizzling)
- Grated cheddar or your favorite cheese
- Dashes of salt
- Dashes of pepper
- Olive oil – for drizzling
Vanilla Peach Ice Cream

This is a perfect summer treat that is quick to prepare and refreshing
- 4 cups of frozen peaches
- 1/2 cup sweetened condensed milk
- 1 teaspoon vanilla
- 1/2 cup whole milk
Crepes and Apple Pie Filling

For the Crepes: Beat the eggs with the milk and vanilla; while stirring slowly add the melted butter
- For the Crepes:
- 1 cup flour
- 2 eggs
- 2 tbs. sugar
- 1 1/4 cups milk
- 1/2 tsp. salt
- 1/4 tsp. cinnamon
- 1 tsp. vanilla
- 2 tbs. butter – melted
- Whipped cream for between and topping of crepes
- Cinnamon for dusting whipped cream
- For the Apples:
- 3 apples – diced
- Zest of 1/2 lemon
- Juice of 1/2 lemon
- 1 tsp. vanilla
- 1/4 cup raisins
- 1/4 cup brown sugar
- 1 tbs. butter
Barley, Fennel and Black Bean Wrap

- 1 cup barley
- 15.5 oz. can black beans - drained
- 1 bunch scallions – chopped
- 1 bulb fennel – chopped fine
- 1/2 cup Italian parsley – chopped fine
- 2 tsp. ground Coriander
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- Juice of 1 lemon
- 1/2 cup Monterey Jack cheese – shredded
- 2 vine-ripe tomatoes – sliced
- 1 tbs. olive oil
- Flour Tortilla Wrap
Coffee Ice Cream {No-Churn}

- For the Coffee Flavor
- 2 tbs. instant coffee
- 2 tbs. brown sugar
- 3 tbs. honey
- 1 tbs. vanilla
- 1 tsp. ground cinnamon
- 1/4 tsp. ground cloves
- Pinch of salt
- Vanilla wafers and chocolate syrup for serving
- For the Ice Cream
- 14 . oz. can sweetened condensed milk
- 16 oz. whipping cream or heavy cream
Chicken Breast Rolls

- Stuffing:
- 2 lbs. boneless chicken breast – sliced thin
- Breadcrumbs
- 1/2 cup Balsamic vinegar
- Olive oil
- Fresh Basil leaves
- Mozzarella cheese – sliced
- Sun dried tomatoes – sliced
- Fresh garlic – crushed and chopped
- Quick Marinara Sauce:
- 4 plum tomatoes – diced
- 1/2 tsp capers plus tsp caper juice
- Few fresh basil leaves – ripped
- 3 cloves garlic – crushed and chopped
- Dash of black pepper
- Dash of red pepper flakes
- 3 tablespoons olive oil
Eggplant Parmesan

- For the Sauce:
- 1 large eggplant
- 1 1/2 cups flour
- 1/2 cup cornmeal
- 1 1/2 cups of milk
- 3 eggs
- Dash of salt
- Dash of black pepper
- Dash of chili powder
- Dash of garlic powder
- Olive oil
- 8 oz. block of Monterey Jack cheese
- 1/2 cup of grated parmesan cheese
- 28 oz. can crushed tomatoes
- 5 cloves of garlic – chopped
- 1 onion - sliced
- Healthy handful of fresh basil
- 1 tsp. of capers plus a little juice
- 1/2 cup chicken broth
- 5 sweet cherry peppers – sliced
- 9 oz. can of black olives – drained and chopped
- Dashes of black pepper
- Dashes of ground oregano
- Dashes of red pepper flakes
Sweet and Spicy Ginger String Beans
