Italian Style Potato Latkes

Place slices of the potatoes and onion in the food processor, using the shredding blade
- 5 potatoes – quartered lengthwise
- 1 egg plus 2 tablespoons milk
- 1 small red onion - quartered
- 3 tbs. flour
- 1/4 cup fresh Italian parsley – chopped
- 1/4 tsp. black pepper
- 1/4 tsp. salt
- 1/4 tsp. red pepper flakes
- 1/4 cup grated Romano or Parmesan cheese
- Vegetable oil for frying
Warm Honey Brie

- 1 wheel of Brie cheese
- 2 tablespoons honey
Spinach Corn Bread

This is a nice twist on traditional cornbread
- 10 ounce package frozen spinach, chopped
- 1/4 cup butter
- 1 cup cornmeal
- 1 cup flour, sifted
- 1 tablespoon baking power
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1 egg
- 1 cup sour milk or buttermilk (for sour milk add 1 teaspoon vinegar to the milk and let it sit for 5-10 minutes until it curdles a bit)
Roasted Chicken with Orange Basil Butter Rub and Oven Roasted Red Peppers

These are delicious and go great on a sandwich
- Rub for the chicken skin:
- 1 whole chicken – about 5 lbs.
- Dashes of ground oregano
- Dashes of salt
- Dashes of black pepper
- Dashes of garlic powder
- 1 tsp. of sugar
- Drizzle of olive oil
- Orange Basil Butter:
- 3 tablespoons of butter
- 1 tablespoon of orange marmalade
- 2 cloves of garlic
- Healthy handful of fresh basil
- Dash of salt
- Dash of black pepper

- 3 red bell peppers – sliced
- 1/2 Spanish onion – sliced
- 4 cloves of garlic – chopped
- Healthy handful of fresh basil - chopped
- Dashes of salt
- Dashes of red pepper flakes
- Dashes of dried oregano
- Drizzle of olive oil
Ultimate Stuffed Roasted Turkey

This turkey will be very moist and delicious with a slight hint of heat from the Jalapeño! Enjoy!
- Turkey Rub:
- 12 lb. whole Turkey
- Juice of one lemon – stuff the left over lemon wedges into the turkey cavity
- 2 tablespoons dried oregano
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 cup olive oil
- Stuffing:
- 1/2 cup sun dried tomatoes
- 1/2 cup marinated artichoke hearts – with marinade
- 1/2 cup fresh parsley
- 1 jalapeño – without seeds
- 3/4 cup seasoned breadcrumbs
- 1/4 cup grated Romano cheese
- 4 cloves garlic
- 2 tablespoons honey
Rustic Tomato Sauce with Roasted Peppers and Cannellini Beans

This is both delicious and satisfying with a good loaf of bread
- 4 cloves of garlic - chopped
- 3 stalks of celery - chopped
- 1/2 cup sliced sweet marinated roasted red peppers - sliced - plus a little pepper juice
- 1/4 cup roasted marinated hot cherry peppers – sliced
- 1 onion – sliced
- 1/4 cup chopped olives - coarsely chopped
- 29 oz. can cannellini beans – rinsed and drained
- 28 oz. can crushed tomatoes
- 1/2 tsp. of salt
- Dashes of black pepper
- Dashes of dried oregano
- Dashes of red pepper flakes
- 1/2 cup chicken broth
- 1/4 cup red wine
- Olive oil – for drizzling
- Romano cheese
- 1 lb. box of spaghetti
Lemon Zucchini Salad

Cook barley as directed and set aside
- For the Dressing:
- 4 zucchini – roughly skinned and sliced
- 4 – 5 cloves of garlic – chopped fine
- 1 medium red onion – chopped small
- 4 stalks celery – chopped small
- 1/4 cup fresh Italian parsley – chopped
- 1/2 cup instant barley
- Lemon slice for garnish
- Juice of 2-3 lemons
- 1/2 cup olive oil
- 1/2 tsp. red pepper flakes
- 1 tsp. salt
- 1 tsp. dried oregano
Smore Krispies

When the weather gets hot and you’re craving something easy yet sweet, try this no-bake smore inspired treat!!
- 2-3 tablespoons butter, melted
- 3 cups mini marshmallows
- 3 tablespoons milk
- 5 cups Kellogg’s Rice Krispies Cereal
- 5 sheets graham crackers
- 2 cups M and M’s - chopped
Rice Krispie Chicken Strips

Place the Rice Krispies in a food processor and process
- For the Coating:
- 3 lbs. of boneless chicken breast – sliced into strips
- 1/2 cup milk
- 1 tablespoon vinegar
- Soak the chicken in the milk and vinegar while preparing the coating or longer; an hour or so.
- 2 cups instant potato buds
- 2 cup Rice Krispies
- 1/2 cup corn meal
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp. ground cumin
- 1 tsp. curry powder
- 1 tablespoon brown sugar
- Vegetable oil for frying
Mushroom & Onion Omelet

This is a great meal for the beginning, middle or end of the day with your favorite cup of coffee or tea
- 6 eggs – beaten plus 3 tablespoons of water
- 1 quart of mushrooms – sliced
- 3 cloves of garlic – crushed & chopped
- 4 scallions – diced
- 1 onion – sliced
- 1 tsp of Paprika
- 1 tsp black pepper
- 1/4 tsp Chili Powder
- 1/2 cup grated mozzarella
- 3 tablespoons Olive Oil
