Homemade Pizza with Sweet and Spicy Sauce

Dough: Combine the flour, baking powder and salt
- Dough:
- 2 1/2 cups flour
- 2 3/4 tsp. baking powder
- 3/4 tsp. salt
- 3 tbs. olive oil
- 1/2 cup water
- 1/2 cup milk
- For the Sauce:
- 3 long hot Italian peppers – remove seeds and slice
- 3 red bell peppers – sliced
- 4 cloves of garlic – chopped
- 1 sweet onion – sliced
- 2 cups dried apricots – chopped
- 28 oz. can of crushed tomatoes
- 1/4 cup red wine
- 1/2 cup fresh basil – chopped
- 1/2 tsp. red pepper flakes
- 1 tsp. salt
- 1 tsp. dried oregano
- 2 tablespoons olive oil
- 8 oz. shredded mozzarella or your favorite shredded cheese
- Romano or Parmesan cheese – for grating
- Cornmeal
- More Olive oil (for drizzling)
Spiced Nut Cookies

Preheat oven to 350 degrees F
- 1 package Betty Crocker Sugar Cookie Mix
- 1/2 cup crushed nuts (preferably almonds)
- 1/2 teaspoon cinnamon
- 1/4 teaspoon all spice
- 1/2 cup butter
- 1/2 teaspoons almond flavoring
- 1 teaspoon vanilla extract
- 1 cup confectioner's sugar
Apple Sugar Bundt

Preheat oven to 350 degrees F
- Homemade Confection's Sugar:
- 1 box white cake mix
- 1/2 cup self-rising flour
- 2 large apples - peeled, cored, and chopped
- 2 eggs
- 1/2 cup apple sauce
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
- 1 cup milk
- 1 cup white sugar
- 2 tablespoons cornstarch
Hawaiian Chicken

Combine all of the above ingredients for the marinade in a large bowl
- Marinade:
- 8 chicken thighs
- Fresh pineapple - sliced
- 2 large cloves of garlic – finely chopped
- 1 inch piece of fresh ginger – grated
- 1/4 cup fresh basil - chopped
- Juice of 1 orange
- Juice of 1 lemon
- 1 tablespoon brown sugar
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 tablespoon dried curry
- 2 tablespoons teriyaki sauce
- 2 tablespoons soy sauce
- 1 tsp. balsamic vinegar
Sunday Scones

Heat oven to 400 degrees F
- 2 cups self - rising flour
- 5 tablespoons sugar
- 5 tablespoons butter, softened
- Pinch of salt
- 1 tablespoon orange zest
- Handful of raisins
- 1 egg
- 3/4 cup milk
Lemon & Rosemary Grilled Chicken

- Marinade:
- 3 boneless chicken breasts
- Juice of 1 lemon
- 4 tablespoons olive oil
- 3 cloves garlic – crushed & chopped
- 3 tablespoons fresh chopped parsley
- 4 sprigs of fresh Rosemary
- 1/2 tsp black pepper
Cucumber and Cannellini Bean Salad

Combine all of the ingredients for the salad in a bowl
- Dressing:
- 15 oz. Can of cannellini beans – drained
- 1/2 red onion – sliced thin
- 5 cucumbers – sliced thin
- 2 sun dried tomatoes – sliced thin
- 1 tbs. capers – chopped plus 1 tbs. caper juice
- 1/2 cup fresh basil – chopped
- 14 oz. can of artichokes – drained and sliced
- Juice of 1 lemon – plus sliced lemon wedges for garnish
- 2 tablespoons vinegar
- 1 tablespoon sugar
- 1/4 - 1/2 tsp. red pepper flakes
- 1/4 tsp. black pepper
- 1/2 tsp. salt
- 3 tablespoons olive oil

- For the Marinade:
- 2 – 3 lbs. cubed beef
- 2 bell peppers – cut into 1 -2 inch pieces
- 1 onion – sliced thick
- 1 quart button mushrooms – sliced in half
- Skewers – soaked before using on the grill
- Juice of 1 lemon
- 4 cloves of garlic – chopped
- 1/2 cup of Italian parsley – chopped
- 1 tbs. capers – chopped – plus a tablespoon of caper juice
- 1 tsp. dried oregano
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 2 – 3 tbs. olive oil

- 3 tablespoons canola oil
- 2 tablespoons milk
- 1 apple, chopped
- 1/2 cup strawberries, sliced
- Crumb Topping:
- 2 tablespoons brown sugar
- 2 tablespoons oats
- 2 tablespoons flour
- 1 tablespoon canola oil
Zucchini Quiche

This is a perfect lunch or light dinner with a nice side salad
- Prepare a crust:
- 2 cups flour
- 3 tablespoons of butter
- 2 tablespoons of Crisco
- 2 tablespoons of oats
- Dash of salt
- Dash of pepper
- 4 tablespoons Cold water – plus more if needed to bind the dough
- For the Filling:
- 1 large zucchini – shredded
- 1 small red onion – sliced thin
- 2 cloves of garlic – chopped
- 5 eggs – beaten plus a splash of milk
- 4 oz. cheddar cheese – shredded
- 1/4 cup grated parmesan cheese
- Dashes of salt
- Dashes of black pepper
