Pumpkin Cheesecake with Sour Cream Topping

You will not eat pumpkin pie if you try this cheesecake
- Crust:
- 3/4 cup graham cracker crumbs
- 1/2 cup pecans, finely chopped
- 1/4 cup light brown sugar, finely packed
- 1/4 cup granulated sugar
- 1/2 stick unsalted butter, melted and cooled
- Filling:
- 1 1/2 cup solid pack pumpkin
- 3 large eggs, room temp
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ground ginger
- 1/2 tsp salt
- 1/2 cup light brown sugar, firmly packed
- 3 8oz pkg cream cheese, cut into bits and softened
- 1/2 cup granulated sugar
- 2 tbsp heavy cream
- 1 tsp cornstarch
- 1 tsp vanilla
- Topping:
- 2 cups sour cream
- 2 tbsp granulated sugar
- 16 pecan halves for garnish
Hummus bi Tahini

This recipe comes from a very old cookbook, from the Lebanese Church Ladies' Guild, from Cleveland, OH
- 1 19oz can chick peas (or dried peas, soaked overnight)
- 2 cloves garlic, crushed
- 1/3 cup tahini
- 1/3 cup lemon juice, or to taste
- 2 tbsp olive oil
- 1 tbsp chopped parsley
- 1 tsp salt
- Dash paprika
Pasta - Farro OR Spelt OR Whole Wheat

You can use any of the three flours in this recipe
- 1 1/2 cup flour (farro, spelt or whole wheat)
- 1/2 cup all purpose flour
- 1 tsp olive oil
- 4 eggs
- 2 Tbsp water
- pinch of salt
Baked Eggs Frittata Style

Instead of frying, bake your eggs in the style of a frittata
- 2-3 eggs
- 2 Tbsp milk
- Ingredients in eggs; potatoes, veggies, cheese, meats, any leftovers you like
Stuffed Grape Leaves

- 75-85 grape leaves
- 1 lb. ground lamb shoulder
- 1 cup rice
- 1 can (#2) tomatoes
- 1 tsp dried mint
- 1 lemon, sliced
- salt, pepper and paprika to taste
Arancini di Riso (Fried Rice Balls)

Arancini di Riso, or Fried Balls of Rice
- 5 cups chicken stock
- 3 Tbsp extra virgin olive oil
- 1 medium onion, chopped
- 1 cup finely diced ham or prosciutto, about 3 oz
- 2 cups arborio rice
- 1 cup dry white wine
- 1/2 tsp kosher salt, plus more for seasoning
- 1 cup frozen peas, thawed
- 1 cup grated Parmigiano-Reggiano
- 10 basil leaves, chopped
- 4 oz fresh mozzarella, cut into cubes (about 24 cubes needed)
- 1 cup all-purpose flour
- 2 cups fine dry breadcrumbs
- 2 large eggs
- vegetable oil, for frying
Potato Fritters

Combine the potatoes, flour, cheese, eggs and milk and beat until light
- 2 cups mashed cooked potatoes
- 1/3 cup flour
- 1/3 cup shredded cheddar cheese
- 2 eggs
- 1/4 cup milk
- 1 -1 1/2 cups oil
Honey Walnut Shrimp

Way better than take out. I like to serve this with cooked broccoli and rice
- 1/2 cup water
- 1/2 cup sugar
- 1/2 cup walnuts
- 1 cup vegetable or canola oil, for frying
- 1 egg
- 1/2 cup cornstarch
- 1 pound large shrimp, peeled and deveined
- 1/2 cup mayonnaise
- 3 Tbsp honey
- 1 Tbsp sweetened condensed milk, you can add another Tbsp if you like a little sweeter
- Sliced green onions, for garnish, optional
Lentil Soup

Combine all ingredients except parsley and vinegar in large soup pot
- 7-8 cups chicken broth
- 1 (1 pound) can stewed tomatoes
- 1 1/2 cups lentils
- 1 cup brown rice
- 1 medium onion, chopped
- 2-3 stalks celery, chopped
- 4-5 carrots, chopped
- 3-4 cloves garlic, minced
- basil, oregano and thyme, to taste
- 2 bay leaves
- 1-2 bouillon cubes (optional)
- 5-6 small dried red chiles (optional)
- 1/2 cup fresh parsley, chopped
- 2 Tbsp apple cider vinegar
Chocolate Cake

This recipe will yield a two layer cake
- 2 cups all purpose flour
- 2 cups sugar
- 3/4 cup unsweetened cocoa powder
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 tsp espresso powder
- 1 cup milk
- 1/2 cup vegetable or canola oil
- 2 eggs
- 2 tsp vanilla extract
- 1 cup boiling water
