  • Crust:
  • 3/4 cup graham cracker crumbs
  • 1/2 cup pecans, finely chopped
  • 1/4 cup light brown sugar, finely packed
  • 1/4 cup granulated sugar
  • 1/2 stick unsalted butter, melted and cooled
  • Filling:
  • 1 1/2 cup solid pack pumpkin
  • 3 large eggs, room temp
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 1/2 cup light brown sugar, firmly packed
  • 3 8oz pkg cream cheese, cut into bits and softened
  • 1/2 cup granulated sugar
  • 2 tbsp heavy cream
  • 1 tsp cornstarch
  • 1 tsp vanilla
  • Topping:
  • 2 cups sour cream
  • 2 tbsp granulated sugar
  • 16 pecan halves for garnish

  • 1/2 cup walnuts
  • 1 cup vegetable or canola oil, for frying

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup mayonnaise
  • 3 Tbsp honey
  • 1 Tbsp sweetened condensed milk, you can add another Tbsp if you like a little sweeter
  • Sliced green onions, for garnish, optional
