Vegan Chai Latte Cupcakes with Chai Spice Frosting

You would never think a cupcake like this was possible, but it is! This really is a great cupcake
- Dry Ingredients:
- 1 1/2 cup all purpose flour
- 2/3 cup instant chai latte powder (the chai latte mix from Trader Joe's works perfectly)
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- Wet Ingredients:
- 1/4 cup vegan margarine (earth balance), softened
- 1/4 cup oil (sunflower, grape seed or vegetable all work)
- 1/4 cup vegan vanilla yogurt
- 1/3 cup applesauce
- 1/3 cup vegan sour cream
- 2/3 cup almond milk
- 1 Tbsp vanilla
- Chai Spice Frosting:
- 1/4 cup vegan margarine (earth balance), softened
- 1/4 cup almond milk
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp cardamom
- 1/4 tsp ginger
- 1/4 tsp nutmeg
- 4 cups powder sugar
Lentil Soup II

- 2 cups lentils, rinsed
- 9 cups water
- 1 ham bone
- 1/2 lb bacon, diced
- 3/4 cup chopped onion
- 3/4 cup chopped celery
- 1/2 cup chopped carrots
- 1/2 cup chopped leeks
- 1 clove garlic, minced
- 1 bay leaf
- 1/2 tsp thyme
- 2 tsp salt
- 1/4 tsp pepper
- 2 Tbsp vinegar
- 6 frankfurters, sliced
Chicken Stock

This is a great stock to use as a base for Chicken Ramen Soup Makes 2 1/2 Quarts
- 3 lbs chicken trimmings - bones, necks, backbones, carcasses, wing tips and feet (if avail)
- 5 whole scallions, trimmed
- 2 1/2 inch piece of fresh ginger, peeled and quartered
- 3 quarts water
Mexican Corn Chowder

1. In a large flameproof casserole, melt butter over medium heat
- 3 Tbsp butter
- 1 large onion, chopped
- 1 medium green bell pepper, chopped
- 1 garlic clove, crushed
- 1 can (4oz) chopped green chilies (mild or medium-hot)
- 1 can (16oz) whole tomatoes, drained and broken up
- 2 cans (16oz each) cream style corn
- 1 can (16oz) corn kernels, drained
- 2 cups chicken stock or broth
- 1 cup milk
- 2 cups chopped cooked chicken
- 1/2 cup shredded Monterey Jack cheese
Dark Chocolate and Raspberry Fudge

1. Place baking chips in a single layer on a small baking sheet
- 1 10-12oz pkg white baking chocolate chips
- 1 tsp butter, softened
- 3 cups dark chocolate chips
- 1 can 14oz sweetened condensed milk
- 1/4 cup raspberry liqueur
- 1/8 tsp salt
Cream of Cactus Soup

Use Nopales in this recipe
- 2 lb cooked cactus, chopped
- 2 quarts chicken broth
- 1 oz sunflower oil
- 1 clove garlic
- 4 oz white onion, diced
- allspice pepper or black pepper to taste, but Allspice Pepper is preferred
- salt, to taste
- 10 stems cilantro
- 20 oz whole milk
- 2 oz mexican cream OR heavy cream, but mexican cream is preferred
Pasta Fagioli Soup

One of my favorite soups complete with classic Italian ingredients
- 2 Tbsp olive oil
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 2 14.5oz cans stewed tomatoes
- 3 cups low sodium chicken broth
- 1 15oz can cannellini beans
- 1/4 cup fresh parsley, chopped
- 1 tsp dried basil
- 1/4 tsp ground black pepper
- 1/4 pound pasta (elbows, ditalini and small shells all work)
- 1-4 Tbsp cream or half n half (optional)
Pipian Sauce

1. Preheat a large, heavy skillet over medium heat until hot
- 1 1/4 c pumpkin seeds
- 1 lb tomatillos, husked and rinsed
- 1 serrano chile, stemmed
- 1/2 med white onion, roughly chopped
- 1 1/2 cup chicken broth, warmed
- 1/4 cup cilantro, fresh leaves loosely packed
- 1 tsp sugar
- salt and freshly ground pepper
Adobo or Chipotle

This will make 1 1/2 cups *Use scissors to cut off the stem of the chile and then cut along the side of it
- 3 oz Guajillo chiles or Chiipotle chiles , wiped clean, stemmed, split open, seeded and deveined
- 3/4 cup Water for blending, or more if necessary
- 2 clove Garlic, peeled
- 1 1/2 tsp Apple Cider Vinegar
- 3/4 tsp fine salt or 1 1/2 tsp kosher salt
- 3/4 tsp sugar
- 1/4 tsp - rounded Cumin
Zucchini Bread - The Silver Palate

Famous from the Silver Palate shop in Manhattan, back in 1977, this bread was one of their favorites
- 3 Tbsp sweet butter, softened
- 3 eggs, room temp
- 1 1/4 cups oil
- 1 1/2 cups granulated sugar
- 1 tsp vanilla extract
- 2 cups grated unpeeled raw zucchini
- 2 cups unbleached, all-purpose flour
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground cloves
- 1 cup shelled walnuts, chopped
