Sweet Hot Tomato Jam

- 4 lbs ripe tomatoes
- 2 Tbsp honey
- zest and juice of 1 lemon
- 2 serrano chiles, sliced paper thin
- 1 Tbsp kosher salt
- 2 Tbsp sugar
- 1 tsp red pepper flakes
Walnut Sauce - Salsa di Noci

A classic Italian sauce with pasta
- 6 oz walmuts
- 2 garlic cloves
- 2 slices white bread (crusts removed)
- milk (for soaking and to thin out sauce)
- 3 Tbsp olive oil
- salt to taste
- Pasta: Penne, Tagliatelle and Ravioli are all great with this sauce.
Banana Bread - Paleo

You can use a glass or metal loaf pan
- 4 bananas mashed (2 1/2 cups)
- 4 eggs
- 1/2 cup almond butter (can use coconut, sunflower seed or macadamia nut butter)
- 4 Tbsp grass fed butter
- 1/2 cup coconut flour
- 1 Tbsp cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla
- pinch of salt

- 1 lb bag baby carrots
- 2 Tbsp butter or margarine
- 3 Tbsp sugar
- 1 tsp rum flavoring
Coconut Pineapple Bars

1. Preheat the oven to 325 degrees F
- Icing:
- 1/3 cup dried shredded coconut
- 3/4 cup self-rising flour
- 1/2 cup all purpose flour
- 3/4 cup light brown sugar
- 2 Tbsp sunflower seeds.....*you can substitute other nuts or seeds of your choice
- 1/2 cup chopped macadamia nuts
- 1/3 cup chopped dates
- 1 Tbsp chopped candied ginger
- 1/2 cup dried shredded coconut
- 8 oz can crushed pineapple, drained
- 1/3 cup unsalted butter, melted
- 2 eggs, lightly beaten
- 2 cups confectioners sugar
- 2 Tbsp unsalted butter, melted
- 1 1/2 Tbsp lemon juice

- 1/4 cup light brown sugar
- 1/4 cup honey
- 1 Tbsp vegetable oil, (plus extra if using grill pan)
- 1 lime, juiced

Brussels Sprouts Gratin II

Heat the oven to 425 degrees 1
- 2 lbs brussels sprouts, stem ends trimmed and cut in half through the stem end
- 3 Tbsp unsalted butter, melted
- salt
- freshly ground black pepper
- 1 cup coarse fresh breadcrumbs, from about 3 slices white sandwich bread, crusts removed
- 1/4 cup finely grated gruyere
- 1 1/4 cup heavy cream

- For the muffins:
- 1 cup pecans, finely chopped
- 1 cup brown sugar, packed
- 1/2 cup all purpose flour
- 2 large eggs
- 1/2 cup butter, melted
- 1 tsp vanilla
- For the streusel:
- 1/2 cup all purpose flour
- 1/3 cup sugar
- 1/2 tsp cinnamon
- 3 Tbsp unsalted butter, melted
- 1/4 cup pecans, finely chopped (optional)
Sweet and Sour Pork

This is a classic chinese style recipe
- Chicken bouillon
- 3/4 cup vinegar
- 60 oz pineapple chunks, reserve juice
- 3 tbsp soy sauce
- 2 bell peppers
- 1/2 cup onions
- 1 lb. pork chunk (3 lb. total recipe)
- 1/4 cup butter
- 2 cup water
- 1/2 tsp salt
- 3/4 cup brown sugar
- 1 tbsp corn starch 1 1/2 tsp salt
Oven Beef Burgundy

Preheat oven to 325 degrees F Blend soy sauce with flour in a 2 1/2-3 quart dutch oven
- 2 Tbsp soy sauce
- 2 Tbsp flour
- 2 lbs beef stew eat, cut into 1 1/2 inch cubes
- 4 medium carrots, peeled and cut into chunks
- 2 large onions, sliced
- 1 cup thinly sliced celery
- 1 clove garlic, minced
- 1/4 tsp black pepper
- 1/4 tsp marjoram
- 1/4 tsp thyme
- 1 cup dry red wine
- 1 cup sliced mushrooms
