Lentil Soup

Ingredients
- 7-8 cups chicken broth
- 1 (1 pound) can stewed tomatoes
- 1 1/2 cups lentils
- 1 cup brown rice
- 1 medium onion, chopped
- 2-3 stalks celery, chopped
- 4-5 carrots, chopped
- 3-4 cloves garlic, minced
- basil, oregano and thyme, to taste
- 2 bay leaves
- 1-2 bouillon cubes (optional)
- 5-6 small dried red chiles (optional)
- 1/2 cup fresh parsley, chopped
- 2 Tbsp apple cider vinegar

Preparation
Step 1
Combine all ingredients except parsley and vinegar in large soup pot. Cover and simmer for 45 minutes. Add parsley and vinegar and serve.
