Ingredients

  • 7-8 cups chicken broth
  • 1 (1 pound) can stewed tomatoes
  • 1 1/2 cups lentils
  • 1 cup brown rice
  • 1 medium onion, chopped
  • 2-3 stalks celery, chopped
  • 4-5 carrots, chopped
  • 3-4 cloves garlic, minced
  • basil, oregano and thyme, to taste
  • 2 bay leaves
  • 1-2 bouillon cubes (optional)
  • 5-6 small dried red chiles (optional)
  • 1/2 cup fresh parsley, chopped
  • 2 Tbsp apple cider vinegar

Preparation

Step 1

Combine all ingredients except parsley and vinegar in large soup pot. Cover and simmer for 45 minutes. Add parsley and vinegar and serve.
