Creamed Spinach - Gulliver's

This recipe is from the restaurant chain Gulliver's
- 2 10 oz bag frozen leaf spinach
- 3 slices bacon, ground fine
- 1 small onion, ground fine
- 3 tbsp flour
- 1 1/4 cup milk
- 1 tsp salt
- 1/2 tsp pepper
Semolina Bread

1. Pour the water into a mixing bowl, stir in the yeast, and let stand for 10 minutes
- 2 cups lukewarm water (105-115F)
- 1 pkg active dry yeast
- 3 cups semolina flour
- 1 Tbsp salt
- 2 to 3 cups bread flour or unbleached AP flour
- 2 Tbsp cornmeal
- 1 egg
- sesame seeds (optional)
Cranberry Nut Bread

This recipe yields one loaf of bread
- 2 cups flour, sifted
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 egg
- 1 cup sugar
- 2 Tbsp butter or margarine
- 1/2 cup orange juice plus 1/4 cup water
- 1 cup raw cranberries, cut in halves - Can also use dried cranberries
- 1/2 cup walnuts, chopped
Beef Stock

A great beef stock base for Ramen Noodle Soup Makes 1 3/4-2 Quarts
- 3 lbs. shin been and bones
- 6 scallions, trimmed, green part only
- 2 inch piece of fresh ginger, peeled
- 1 tsp black peppercorns
- 2 1/2 quarts water
- 2 pieces dried mandarin orange peel or fresh peel of 1/2 orange
Sour Cream Pastry Crust for Pot Pie

This pastry pairs very well with the flavors of vegetable fillings
- 1 1/2 cups all purpose flour
- 1/2 tsp salt
- 2 tsp baking powder
- 1/2 cup (1 stick) chilled, unsalted butter, in 1/2 inch slices
- 1 cup sour cream
Roulades of Peppers

Preheat oven to 375 degrees
- 3-4 Bell Peppers, any color, roasted, peeled and cut in 4-5 cm slices
- 1/4 cup pine nutes
- 1/4 cup raisins
- 1/3 cup capers
- 1/4 cup anchovy
- 1/4 cup parsley, fresh, chopped
- 1 egg
- 1/2 cup Italian breadcrumbs
- salt and pepper to taste
Vegan Cream Cheese Spice Frosting

In a bowl, cream together the cream cheese and the vegan butter
- 8 oz vegan cream cheese, softened
- 1/4 cup vegan butter (earth balance)
- 1 1/2 cups confectioner's sugar
- 1 Tbsp vanilla extract
- 2 tsp cinnamon
- 1 tsp ginger
- 1/4 tsp nutmeg (optional)
- pinch of salt
Pear and Parsnip Gratin

- 1 3/4 lbs parsnips, unpeeled, trimmed and cut in 1-inch chunks
- 3 Bosc pears, unpeeled, cored and cut into 1-inch chunks
- 3 Tbsp unsalted butter, small-diced
- 1/2 cup sour cream
- 2 extra large eggs, lightly beaten
- 3/4 tsp grated orange zest
- 3/4 tsp ground ginger
- Kosher salt and fresh ground pepper
Tart Crust - Sweet n Buttery - (Silver Palate)

- 1 1/2 cups unbleached all purpose flour
- 1/4 cup very fine granulated sugar
- 1/2 tsp salt
- 10 Tbsp sweet butter, chilled (1 1/4 sticks)
- 2 egg yolks
- 1 tsp vanilla extract
- 2 tsp cold water
Butter and Fresh Sage Sauce

Makes enough sauce to cover 1 pound of pasta
- 1 1/2 sticks of butter, or more to taste
- 10 fresh whole sage leaves
- 1/4 tsp freshly ground black pepper, or to taste
- hot water, from the pasta-cooking pot
- 1 cup parmigiano-reggiano, grated
