- 2 cups mashed cooked potatoes
- 1/3 cup flour
- 1/3 cup shredded cheddar cheese
- 2 eggs
- 1/4 cup milk
- 1 -1 1/2 cups oil
Combine the potatoes, flour, cheese, eggs and milk and beat until light. Heat oil in deep heavy skillet until very hot. Drop potato mixture by tablespoonfuls into the hot oil and cook until golden brown. Drain on paper towels.
