Easter Pie - Pizza Rustica

Every year at Easter, my Nonni would make Easter Pie and my cousins, siblings and I would devour it
- Filling:
- Dough: Make the dough ahead and let rest for 30 min.
- 4 cups flour
- 6 Tbsp butter
- 1/3 cup milk
- 1 package yeast
- 1/4 tsp salt
- 3 eggs, room temp
- 1/4 cup warm water (100-105 degrees)
- 1 lb Mozzarella Cheese, grated
- 3 lb Ricotta Cheese
- 1/2 lb Italian Salami, diced
- 2 eggs
- 1 stick of pepperoni, sliced or you can dice
- 1/4 cup Parmesan cheese
- 1/2 lb ham, diced
- 1/4 cup chopped parsley
- 6 eggs, Hard Boiled
Italian Peach Cookies - Pesche Dolci

If you do not drink alcohol, you can use flavored syrups (Torani Syrup) instead of the liquor Makes 20-24 cookies
- 1 1/4 cup sugar
- 3 eggs
- 1/2 cup butter
- 1 lemon - zest only
- 1/2 orange - zest only
- 3 1/2 cups flour
- 1/4 tsp salt
- 2 Tbsp milk or whiskey (optional)
- Walnut Shell Halves (for molding cookies)
Peanut Sauce

1. Saute onion and coriander in oil until onion is tender
- 1/2 onion, grated
- 1/2 tsp ground coriander
- 1 Tbsp oil
- 1 cup water
- 1/4 cup peanut butter
- 1 Tbsp Indonesian kecap
- salt
Asian Dipping Sauce

This is a great dipping sauce for chicken and pork
- 1/2 cup soy sauce (pref low sodium)
- 1/2 cup rice vinegar
- 2 Tbsp honey
- 3 cloves garlic, minced
- 2 Tbsp fresh ginger root, minced
- 2 tsp sesame seeds
- 2 tsp sesame oil
Gochujang Cioppino

1. In a large cast iron casserole, heat the oil
- 1/4 cup extra virgin olive oil
- 1 onion, finely chopped
- 6 garlic cloves, thinly sliced
- 2 scallions, thinly sliced, plus more for garnish
- 1 15oz can whole peeled tomatoes, crushed by hand
- 1/2 cup dry white wine
- 3 Tbsp gochujang
- 1 8oz bottle clam juice
- 1/2 lb shelled and deveined large shrimp
- 1/2 lb cleaned squid, bodies thinly sliced and tentacles halved
- 1/2 lb mussels, scrubbed
- 1/2 lb cod, cut into 1 inch pieces
- 1/2 lb firm tofu, cut into 1 inch pieces
- Rice crackers or steamed rice, for serving
Corn Chowder in the Slow Cooker

1. Place all of the spices in a small bowl and mix well
- Tbsp Soup Seasonings:
- 1 cup onion, chopped
- 1-1/2 cup carrots, sliced
- 4 cups potatoes, peeled and diced
- 1 cup frozen corn, or you can use fresh off the cob
- 4 cups vegetable broth, you can substitute chicken broth
- 1 can creamed corn
- 1/4 lb bacon, cooked crispy (you can cook a little more if you love bacon, RESERVE some for topping)
- 2 cups evaporated milk
- 1 1/2 Tbsp-2 Tbsp corn starch (before adding to slow cooker, mix with same amount of cold water and stir well)
- 1 Tbsp thyme
- 1 Tbsp oregano
- 1 Tbsp + 1 Tsp garlic powder OR granulated garlic
- 1 Tbsp onion powder OR granulated onion
- 1 Tbsp salt
- 1 Tbsp pepper
Almond Milk

1. Soak the almonds overnight or up to 2 days
- Equipment:
- 1 cup raw almonds, preferably organic
- 2 cups water, plus more for soaking
- sweeteners like honey, agave syrup,maple syrup or sugar, to taste
- Bowls
- Strainer
- Measuring Cup

- Fine-mesh nut bag or cheese cloth
Creamy Coleslaw

- 3/4 cup mayonnaise
- 3 Tbsp sugar
- 1 1/2 Tbsp white wine vinegar
- 1/3 cup oil
- 1/8 tsp garlic powder
- 1/8 tsp onion powder
- 1/8 tsp dry mustard
- 1/8 tsp celery salt
- dash black pepper
- 1 Tbsp lemon juice
- 1/2 cup half and half
- 1/4 tsp salt
- 1 large head cabbage, very finely shredded
Pistachio Ricotta Cookies

Preheat the oven to 350 degrees F
- For the cookies:
- 2 cups sugar
- 12 oz pistachios
- 1 cup butter, softened
- 1 lb ricotta cheese
- 2 tsp vanilla
- 2 large eggs, room temperature
- 4 cups all purpose flour
- 1 Tbsp baking powder
- 1 tsp salt
- For the Icing:
- 2 cups powdered sugar
- 3 Tbsp milk
- chopped pistachios
Thousand Island Dressing

This recipe is from the Marina del Rey restaurant, Fiasco, now closed
- 1 hard-cooked egg, chopped
- 1/2 cup catsup
- 1/2 cup tomato puree
- 2 cups mayonnaise
- 1/4 cup dill pickle relish
- 1 Tbsp chopped green olives
- 2 tsp minced chives
- 2 Tbsp minced pimiento
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp dry mustard
- 3/4-1 cup buttermilk
