This is a Moist brownie recipe that includes a recipe for brownie frosting
- Creamy Brownie Frosting:
- 1/2 cup butter, melted
- 1 cup sugar
- 1 tsp vanilla
- 2 eggs, room temp
- 1/2 cup all purpose flour
- 1/3 cup cocoa
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup chopped nuts (optional)
- 3 tbsp butter, softened
- 3 tbsp cocoa
- 1 tbsp light corn syrup
- 1/2 tsp vanilla
- 1 cup powder sugar
- 1-2 tbsp milk
Asparagus Creamy Soup

1. In a Dutch oven, heat butter over med-hi heat
- 2 Tbsp butter
- 2 lbs fresh asparagus, trimmed, peeled and coarsest chopped
- 1 lg sweet onion, coarsely chopped
- 1 carton, 32 oz, reduced sodium chicken broth
- 1 Tbsp lemon juice
- 1 tsp fresh tarragon, minced OR 1/4 tsp dry tarragon
- 3/4 tsp salt
- 1/8 tsp fresh ground pepper
- 1/4 cup plain Greek yogurt
- 1/2 tsp grated lemon peel
Maple Garlic Dressing

Place all ingredients in a bowl or shaker
- 1/4 cup maple syrup
- 2 garlic cloves, minced or crushed
- 1/3 cup olive oil
- Juice from 1 lemon
- 1-2 tsp Dijon mustard
- 1/8 tsp salt

Cherry, Pasilla Chile, and Vanilla Custard Tart

This is the tart/dessert that Chef Alex Guarnaschelli made on the finale of Next Iron Chef
- TART DOUGH:
- 2 cups all purpose flour
- 1/2 tsp kosher salt
- pinch of black pepper
- 1 Tbsp plus 2 tsp sugar
- 12 Tbsp unsalted butter (1 1/2 sticks), cubed and cold
- grated zest of 1/2 lemon
- 1/2 cup ice water
- PASTRY CREAM:
- 6 large egg yolks
- 3/4 cup sugar
- 3 Tbsp cornstarch
- 1 1/2 cups whole milk
- 2 vanilla beans, split lengthwise and scraped
- 2 Tbsp unsalted butter
- 1 Tbsp heavy cream
- 1/2 tsp vanilla extract
- TOPPING:
- 4 cups rich red wine, preferably merlot or zinfandel
- 1/2 small cinnamon stick
- 3 pasilla chiles, stemmed and soaked in warm water until softened
- 4-5 Tbsp packed dark brown sugar
- 2 Tbsp unsalted butter, plus more for greasing the pan
- 1 pound fresh cherries, split and pitted (2 1/2 cups)

- 2 lb. Ricotta Cheese
- 2/3 cup sugar
- 1/3 cup all purpose flour
- 6 eggs
- 1/4 tsp cinnamon
- 2 tsp orange zest
- 2 tsp vanilla
- 1/8 tsp salt
Opah Fish oven roasted with Vegetables

Preheat the oven to 350 degrees F
- 4 fillets Opah, about 1 inch thick
- salt
- olive oil
- 4 garlic cloves, smashed
- 2 red or yellow peppers, stemmed and seeded, cut in 3/4 inch chunks
- 2 medium shallots, quartered
- 2-3 sprigs of fresh thyme, or 1 tsp dried
- 2-3 sprigs fresh oregano, or 1 tsp dried
- 1 pint grape tomatoes
- zest and juice of one lemon
- 1/2 cup kalamata olives
- 1/2 tsp crushed red pepper
- freshly ground black pepper
- lemon wedges
Salisbury Steak with Mushroom Gravy - Paleo

1. Place all of the steak ingredients, except the coconut oil, in a medium bowl and mix gently to combine
- GRAVY:
- Steaks: 1 1/2 lb ground beef, grass fed
- 1/2 med yellow onion, finely chopped
- 1 clove garlic, minced
- 2 tsp granulated onion
- 1/2 tsp chopped fresh rosemary
- 1 tsp paprika
- 1 tsp fennel seed
- 1 tsp sea salt
- fresh ground black pepper, to taste
- 2 Tbsp coconut oil
- 8 oz white mushrooms, chopped
- sea salt and fresh ground black pepper, to taste
- 2 cups beef broth
- 1/2 cup coconut milk
- 1 Tbsp coconut flour, sifted
- 1 Tbsp arrowroot starch, mixed with a tiny bit of cold water to make a slurry

- 1 cup cooked rice (you can sub cous cous, bulgur wheat, etc)

- 1 clove garlic, finely chopped
- 1 can (15 oz) tomato sauce
- shredded mozzarella, or other cheese *optional
Candied Sweet Potato Hash

- 3 medium sweet potatoes or yams, cut in small cubes
- 1-2 large granny smith apple, peeled cored and cut in same size "cubes"
- 1/4 stick butter
- 3-4 tbsp olive oil
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground ginger
- 2 cloves garlic, minced
- 1/4 cup brown sugar
- 4 tbsp balsamic vinegar
- salt and pepper to taste
