Detroit Style Pizza

1. Spray a 13x9 nonstick baking pan, with non-stick spray, then put the olive oil in the pan
- 1 Tbsp extra virgin olive oil
- 2 1/4 cup all purpose flour
- 1 1/2 tsp rapid-rise or instant yeast
- 1 1/2 tsp sugar
- 1 cup water, room temperature
- 3/4 tsp salt
- 10 oz monterey jack cheese, shredded (2 1/2 cups)
- **1 cup of Tomato sauce (whatever sauce you have, add extra dry ingredients into it: 1 tsp dry oregano, 1 tsp dry basil)
Anchovy - Garlic Dressing (Silver Palate)

- 3 or 4 anchovy fillets
- 1 to 2 garlic cloves
- 1 Tbsp Dijon Mustard
- 1 egg yolk
- 1/4 cup red wine vinegar
- salt and fresh ground pepper, to taste

- 3 cloves garlic, minced

Chocolate Mousse with Rum

This is the recipe from Le Sanglier Restaurant in the San Fernando Valley
- 1/4 cup sugar
- 1/4 cup water
- 2 egg whites, at room temperature
- 1 cup semisweet chocolate pieces
- 1/4 cup rum
- 3 cups whipping cream
Fish Stock II

1. Wash the fish heads and bones under cold running water
- 2 lbs fish bones and heads
- 1 onion, sliced into rings
- 1 stalk celery, sliced
- 1 sprig each fresh parsley and thyme
- 2 bay leaves
- 1 star anise, optional
- 6 black peppercorns
- 1 cup white wine
- 1 strip lemon zest
- 1 1/3 quarts water
Shepherd's Pie - ground beef

1. Peel and quarter potatoes, boil in salted water, until tender, about 20 minutes
- 1 1/2 lb ground beef
- 1-2 cup veggies - chopped carrots, peas corn (not 1-2 cups of each veggie)
- 1 onion, chopped
- 1 1/2-2 pounds potatoes
- 8 tbsp butter
- 1/2 cup beef broth
- 1 tsp worcestshire sauce
- salt, pepper and seasonings
- I personally like to make gravy with extra beef broth and flour. I then add it to the beef/veggie mixture before topping with potatoes.
- This is obviously optional.
Sweet Rice Pudding - Arroz Dulce

- 1 cup uncooked rice
- 1/2 cup raisins
- 1 1/2 sticks cinnamon
- 1 cup sugar
- 1 Tbsp grated ginger
- 1 cup canned coconut cream
- 2 cups milk
- 1/2 tsp vanilla
- 1/4 unsalted butter
- ground cinnamon
Blueberry Lemon Bread

This is a Paleo bread, but don't let that deter you from making it
- For The Glaze:
- 1 1/2 cups blanched almond flour
- 1/4 cup coconut flour, sifted
- 1 tsp baking soda
- 1/4 tsp salt
- 4 large eggs
- 1/2 cup coconut oil or ghee, melted (You can also use grass fed butter)
- 1/3 cup raw honey or organic maple syrup
- 3 Tbsp lemon juice
- zest from 2 lemons
- 1-1 1/2 cups fresh blueberries
- 1/3 cup coconut butter, softened
- 2 Tbsp coconut oil, melted
- 2 Tbsp raw honey or organic maple syrup
- 2 Tbsp lemon juice
