Nutty Coleslaw

This is the coleslaw recipe of the now closed, Gulliver's Restaurants
- 6 cups shredded cabbage
- 1/4 cup chopped green onion
- 1/3 cup chopped celery
- 1/3 cup unsalted, roasted peanuts
- 2 Tbsp sugar
- 1 1/2 tsp seasoned salt
- 2 Tbsp red wine vinegar
- 2/3 cup bottled Italian dressing (you can substitute homemade Italian dressing, if you like)
Queso Fundido Sauce

A delicious cheese, cream and jalapeno sauce
- 1 package (8 ounce) cream cheese
- 1/3 cup sour cream
- 1-2 jalapenos
- 1/4 cup half + half
- 1 teaspoon garlic, chopped
- 1 cup jack + cheddar cheese, grated
Buttermilk Biscuits

This is the biscuit recipe from Clifton's Cafeteria, one of Los Angeles' oldest cafeterias
- 3 cups white pastry flour
- 4 1/4 tsp baking powder
- 1 1/2 tsp salt
- 1/2 cup shortening
- 1/8 tsp soda
- 1 cup plus 2 Tbsp buttermilk
- 1/4 cup flour
- 1 egg white
Moroccan Lamb, Chickpea and Lentil Soup

1. Drain and rinse chickpeas
- 1/3 lb chickpeas, soaked
- 2 Tbsp olive oil
- 2 red onions, finely chopped
- 1/2 lb lamb shoulder, diced
- 1 cup chopped fresh parsley
- 1/2 cup chopped celery leaves
- 1 tsp ground turmeric
- 1 tsp freshly ground black pepper
- 1/2 tsp ground ginger
- 1 tsp ground cinnamon
- 1 1/2 quarts water
- 3/4 cup red lentils
- 1 cup chopped fresh cilantro leaves
- 1 lb ripe tomatoes, peeled and seeded
- 1 tsp harissa
- salt
- juice of 1 lemon
Tomato Focaccia Bread

- 1 1/2 cups warm water, 105-115 degrees F
- 1 (1/4oz) package active dry yeast (2 1/2 tsp)
- 3 Tbsp kosher salt
- 1 Tbsp honey
- 4 cups high gluten pizza or bread flour, plus more for dusting
- 1/4 cup extra virgin olive oil, plus more as needed
- 6 ripe heirloom tomatoes, cut into 1/2-inch thick slices
- 1 Tbsp coarse sea salt
Pesche Dolci - Italian “Peach” cookies

The original recipe called for 20 minute bake time
- For Cookie Assembly:
- 1 1/4 cup sugar, plus more for coating cookies
- 3 eggs, room temperature
- 1/2 cup butter, softened to room temp
- 1 lemon, zest only
- 1/2 orange, zest only (if you really like orange flavor, put zest of whole orange
- 3 1/2 cup flour
- 1/4 tsp salt
- 2 Tbsp milk or whiskey
- Chocolate Pudding and Vanilla Pudding
- Walnut Shell Halves (for molding)
- Peach Schnapps or Peach Torani Syrup
- Sambuca or Anise Syrup (make a simple syrup with anise extract if you can’t find Anise Syrup)
- Red and Yellow food coloring

Mayonnaise Lemon Garlic - (Silver Palate)

- 1 whole egg
- 2 egg yolks
- 1/2 cup fresh lemon juice
- salt and fresh ground black pepper, to taste
- 6-8 large garlic cloves, peeled and chopped
- 2 1/4 best-quality olive oil
Cream Cheese Biscuits

1. Adjust oven rack to middle position and heat oven to 450 degrees F
- 1 1/2 cups all purpose flour
- 1 1/2 cups cake flour
- 1 Tbsp sugar
- 1 Tbsp baking powder
- 1 tsp salt
- 3/4 tsp baking soda
- 4 oz cream cheese, cut into 1/2 inch pieces and frozen 30 minutes
- 4 Tbsp unsalted butter, cut into 1/2 inch pieces and frozen 30 minutes
- 1 cup plus 1 Tbsp buttermilk
Morita Salsa

- 2 cups water
- 4 dried morita chiles
- 2 oz white onion, chopped
- 1 garlic clove
- 1 Tbsp cilantro leaves, finely chopped
- 1 1/2 tsp salt
- 2 tomatillos (1/2 oz)
- 1 lb roasted ripe tomatoes
