Fennel Salad - Roasted

1. Preheat oven to 350 degrees
- 1 large fennel bulb or two smaller bulbs
- olive oil for roasting
- sea salt and ground black pepper
- 1-2 organic oranges
- 1/2 small red onion, sliced thin
- 1 about 1 cup of black olives (i like dry cured)
- 1/2-3/4 cup toasted pine nuts or walnuts, chopped
- Juice of 1 lemon
Leek and Apple Salad

This salad tastes better the longer it sits
- Dressing:
- 1-2 small/medium sized apples (i prefer fuji for sweet or granny smith for tart)
- 3-4 medium sized leeks, whites and greens
- 1/4 cup pecans, toasted (you can also use walnuts)
- 1/4 cup dried cranberries or goji berries or raisins (i like the berries the best)
- 1/4 cup extra virgin olive oil
- juice of 1 lemon
- salt and pepper, to taste
- 2 tsp dijon mustard
- 2 tsp honey
- 1.5 Tbsp greek yogurt (optional)
Oatmeal Raisin Cookies - Old Fashioned

Makes 3 dozen cookies
- 3/4 cup all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp kosher salt
- 1 stick unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup dark brown sugar, packed
- 1 large egg
- 1/2 tsp vanilla extract
- 1 1/2 cups quick-cooking oats
- 1/2 cup raisins
Patatas Bravas - Home Fries with Roasted Tomato Aioli

- Olive oil
- 1/2 small red onion, finely diced
- 2 cloves garlic, finely chopped
- 1 Tbsp smoked paprika
- 3/4 cup mayonnaise
- 1 large plum tomato, halved, seeded and roasted until soft
- few dashes hot pepper sauce (Flay recommends Tabasco)
- splash of aged sherry vinegar
- salt and freshly ground black pepper
- 4 large Russet potatoes, parboiled, peeled and cut into 1 inch cubes
- flat leaf parsley leaves
Asian Sweet Salad Dressing

This recipe doubles extremely well as a MARINADE for meat, fish and chicken
- 1/3 cup extra virgin olive oil
- 3 Tbsp apple cider vinegar
- 2 tsp soy sauce
- 3-4 tsp honey
- pinch of dry ginger OR 1/2 tsp zested ginger root (preferred)
- spices to taste
Butternut Squash Soup with Red Chile & Mint

1. Preheat the oven to 375
- 1 butternut squash, about 2 lbs.
- 2 Tbsp EVOO
- 1 onion, finely chopped
- 1 Tbsp, thinly sliced fresh basil, plus more for garnish
- 1 tsp dried mint
- 1 cinnamon stick (3 inches)
- 2-3 tsp ground red chile or ancho chile, plus more for garnish
- coarse salt
- 4 cups vegetable stock
- sliced fresh mint leaves, for garnish
- 2 Tbsp heavy cream, for garnish
Apple and Caramel Bread Pudding

This recipe is a low cal version
- 1 cup unsweetened applesauce
- 1 cup vanilla soy milk
- 1/2 cup fat free egg product
- 1/4 cup brown sugar, packed
- 1 tsp cinnamon
- 1 tsp vanilla
- 5 cups 1 inch cubed french bread
- 3 Tbsp sliced almonds
- 1/4 cup caramel fat free topping
Midori Cheesecake

Make the crust. Mix and pat crust ingredients into a springform pan, covering the bottom and sides part way up
- Crust:
- 1 1/2 cups graham cracker crumbs
- 1/2 cup butter, melted
- Filling:
- 3 8oz pkg cream cheese, room temp
- 1 cup sugar
- 1/8 tsp salt
- 4 eggs, room temp
- 2 tbsp midori
- Topping:
- 2 cup sour cream
- 1/4 cup sugar
- 2 tsp midori
- Glaze:
- 1 cup midori
- 1 package unflavored gelatin
- melon balls to cover cake top
Split Pea Soup
