1. Preheat oven to 350 degrees

  • 1 large fennel bulb or two smaller bulbs
  • olive oil for roasting
  • sea salt and ground black pepper
  • 1-2 organic oranges
  • 1/2 small red onion, sliced thin
  • 1 about 1 cup of black olives (i like dry cured)
  • 1/2-3/4 cup toasted pine nuts or walnuts, chopped
  • Juice of 1 lemon

This salad tastes better the longer it sits

  • Dressing:
  • 1-2 small/medium sized apples (i prefer fuji for sweet or granny smith for tart)
  • 3-4 medium sized leeks, whites and greens
  • 1/4 cup pecans, toasted (you can also use walnuts)
  • 1/4 cup dried cranberries or goji berries or raisins (i like the berries the best)
  • 1/4 cup extra virgin olive oil
  • juice of 1 lemon
  • salt and pepper, to taste
  • 2 tsp dijon mustard
  • 2 tsp honey
  • 1.5 Tbsp greek yogurt (optional)

  • 1/2 small red onion, finely diced
  • 2 cloves garlic, finely chopped
  • 1 Tbsp smoked paprika
  • 3/4 cup mayonnaise
