Thai noodle salad with peanut sauce

1. Cook noodles according to directions on package
- Peanut Sauce:
- 6 oz dry noodles. (ANY kind of noodles will do)
- 4 cups mix of Napa cabbage, carrots and radish, shredded or grated
- 1 red bell pepper, finely sliced
- 1/2 bunch cilantro, chopped (you can substitute basil or mint)
- 3 scallions, sliced
- 1 Tbsp jalapeño, finely chopped
- 1/4-1/2 cup roasted, crushed peanuts. (I like to mix in salad and as garnish)
- 3 thin slices ginger, cut across the grain, about the size of a quarter
- 1 fat clove garlic
- 1/4 cup peanut butter (you can sub almond butter)
- 1 orange (1/4 cup fresh orange juice)
- 1 large lime (3 Tbsp lime juice
- 2 Tbsp soy sauce
- 3 Tbsp honey or agave
- 3 Tbsp toasted sesame oil
- 1/2-1 tsp cayenne pepper
- 1/2 tsp salt
Almond Cream (for tarts)

1. Place Kerrygold Butter and sugar in a stand mixer fitted with the paddle
- 1 1/8 cups kerrygold butter, softened
- 1 1/4 cups sugar
- 5 eggs
- 2 2/3 cups almond flour
- 1/8 tsp vanilla extract
- zest of half an orange
- zest of half a lemon
Cherry Cheesecake Miniatures

Recipe yields 24 miniatures, baked in two 12 cup cupcake pans
- 2 8oz pkg cream cheese, softened
- 2 large eggs
- 1 14oz can sweetened condensed milk
- 1 tsp vanilla
- 1 tsp lemon juice
- 1/4 tsp salt
- 24 vanilla wafers
- 1 21oz can cherry pie filling
Pickled Eggs

1. Boil and peel the eggs
- 12 hard boiled eggs
- 1 Large empty sterilized glass jar
- 4 cups vinegar
- 1 tsp salt
- 2 medium onions, chopped
- 1/3 cup sugar
- 1 Tbsp pickling spices
Orange and Dark Chocolate Tart

- DOUGH:
- 2 cups all-purpose flour, plus more for rolling the dough
- 1/4 cup sugar
- 1/2 tsp kosher salt
- grated zest of 1 lemon
- 16 Tbsp (2 sticks) unsalted butter, cut into small cubes, at room temperature
- 1/4 cup ice water
- ORANGE TOPPING:
- 1/2 cup orange marmalade, preferably chunky
- 4 oranges (about 2 lbs), washed
- GANACHE:
- 1 cup heavy cream
- 1/4 tsp groung cinnamon
- 9 oz semisweet chocolate, chopped (1 1/2 cups)
Vegetable Paella

This recipe comes from Gil Martinez Soto, Chef at Restaurante Virrey de Palafax, in El Brugo de Osma, Spain
- 1/2 cup water
- 1/4 tsp saffron threads
- 2 Tbsp olive oil
- 1 red bell pepper, diced
- 1 med onion, diced
- 4-5 oz baby artichokes, quartered
- 2 large garlic cloves, minced
- 1 1/2 cups Paella rice
- 3 cups vegetable stock OR low salt broth
- 2 cups escarole, chopped
- 1 cup canned ready-cut tomatoes, drained
- 1 15oz can cannelini beans, rinsed and drained
- 1/2 cup shelled peas
- 3/4 tsp paprika
- 1/2 tsp salt
Macaroni Salad

This is a "sweetened" Mac Salad
- 16 oz macaroni
- 4 carrots, shredded
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 1 cup celery, chopped
- 2 cup mayonnaise
- 1 14oz can sweetened condensed milk
- 1/2 cup white vinegar
- salt and pepper, to taste
Mandarin Chicken Salad

Make the dressing and set aside
- For the Dressing:
- 1 cup cooked, cubed chicken
- 3-4 cups salad greens
- 1 can mandarin oranges
- 1/2 cup toasted sliced almonds
- 1/2 cup crispy chinese noodles
- 1/2 cup chopped green onions
- 4 Tbsp oil
- 1 1/2 Tbsp low sodium soy sauce
- 1 Tbsp brown sugar
- 2 Tbsp mandarin orange liquid
- 2 tsp toasted sesame oil
- 2 Tbsp rice wine vinegar
- 1/4 tsp yellow mustard
- 1/8 tsp ground ginger
- 1/4 tsp garlic powder
- 1 Tbsp sesame seeds

Chocolate Souffle

1. Preheat oven to 350 F
- 4 1/2 Tbsp Caster sugar
- 4 Tbsp butter
- 2 Tbsp flour
- 2/3 cup milk
- 1 3/4 cup quality dark chocolate, chopped and divided into 1 cup and then a 3/4 cup
- 3 eggs, room temperature, separated
- 1/2 cup thin cream
- 2 Tbsp brown sugar
- 1 tsp vanilla
- confectioner sugar, to dust
