Bread Pudding

This is the recipe of the famous Ambassador Hotel in Los Angeles (now closed)
- 6 eggs
- 1 quart milk
- 1 tsp vanilla
- 3/4 cup sugar
- 1/2 tsp nutmeg
- 6 thick slices egg bread, diced (or 12 regular size slices egg bread, diced)
- coconut, cherries, raisins or other fruit, if desired
Cream of Leek and Potato Soup II

This can be served hot or cold
- 2 lbs leeks
- 2-4 oz butter (1/2-1 stick)
- 1 1/2 lbs potatoes, peeled and diced
- 1 stalk celery, chopped
- 3-4 cups chicken or vegetable stock
- 3-4 cups milk (use same amount as stock)
- salt and fresh ground pepper
- fresh grated nutmeg
- 12 oz double (heavy) cream
- 3 Tbsp finely cut fresh chives, for garnish
- If you need to add more liquid to the large saucepan, add equal amounts of stock and milk.
Brussels Sprouts with Horseradish and Pomegranate Seeds

- 2 lb brussels sprouts
- kosher salt and fresh ground pepper, to taste
- 1/2 cup olive oil
- 2 tsp smoked paprika
- 2 tbsp grated lemon zest
- 1/4 cup fresh lemon juice
- 2 tsp white wine vinegar
- 1/2 cup pomegranate seeds
- 1/4 cup fresh grated horseradish
Red Picante Salsa - Salsa Picante Roja

Typical of Tex-Mex cuisine, this cooked salsa shows Mexico's influence on the kitchens of the American Southwest
- 4 small ripe tomatoes, peeled and coarsely chopped
- 1/2 cup onion, coarsely chopped
- 2 cloves garlic
- 1 canned pickled jalapeño chili peppers, plus 1 Tbsp of the liquid
- 1 Tbsp corn oil or other vegetable oil
- 1/2 tsp dried oregano, crumbled
- 1/2 tsp salt
Lemon Ice - (Silver Palate)

- 2 cups strained fresh lemon juice
- 2 cups water
- 2 cups granulated sugar
Cheese Sauce

Melt butter in saucepan and stir in flour
- 2 Tbsp butter or margarine
- 2 Tbsp flour
- 1 cup milk
- salt, white pepper
- 1 cup shredded cheddar cheese
Indian Pudding

- 3 cups whole milk
- 4 Tbsp (1/2 stick) unsalted butter, plus more for greasing the dish
- 1/2 cup coarse cornmeal
- 2 Tbsp all-purpose flour
- 3/4 tsp kosher salt
- 1/4 cup blackstrap molasses
- 2 large eggs
- 1/4 cup sugar
- 1/2 tsp ground cinnamon
- 1/2 tsp grated nutmeg
- 1/4 tsp ground allspice
- 1/2 cup golden raisins
- 1 1/2 cups unsweetened whipped cream or ice cream, for serving
Lentils and Fresh Herbs in Champagne Vinaigrette

This recipe yield a very large lentil salad
- Champagne Vinaigrette:
- 2 1/2 cups lentils, cooked
- 1 1/4 cup pecans, toasted and chopped
- bunch scallions or 1 shallot, diced fine
- 1/4 cup fresh basil, chopped fine
- 1/4 cup fresh thyme, chopped fine
- 1/4 cup fresh mint, chopped fine
- 1/4 cup fresh tarragon, chopped fine
- 1/3 cup champagne vinegar
- 1/3 cup lemon olive oil
- 2 tsp dijon mustard
- 2 garlic cloves, crushed
- 2 Tbsp brown rice syrup
Crispy Baked Chicken Breasts

- 2-4 boneless skinless chicken breasts
- bread crumbs
- grated parmesan
- mayonnaise
- milk
- salt and pepper to taste

- Crust:
- 5 Tbsp butter, melted
- 1 1/2 cup graham cracker crumbs
- 1/2 cup slivered almonds
- Filling:
- 1 14oz can sweetened condensed milk
- 1/2 cup key lime juice
- 1 tsp grated lime zest
- 2 egg yolks
- Topping - Meringue:
- 2 egg whites
- 1/4 tsp cream of tartar
- 1/4 cup sugar
- 1 tsp grated lime zest
