Shepherd's Pie - ground beef

Ingredients

  • 1 1/2 lb ground beef
  • 1-2 cup veggies - chopped carrots, peas corn (not 1-2 cups of each veggie)
  • 1 onion, chopped
  • 1 1/2-2 pounds potatoes
  • 8 tbsp butter
  • 1/2 cup beef broth
  • 1 tsp worcestshire sauce
  • salt, pepper and seasonings
  • I personally like to make gravy with extra beef broth and flour. I then add it to the beef/veggie mixture before topping with potatoes.
  • This is obviously optional.

Preparation

Step 1

1. Peel and quarter potatoes, boil in salted water, until tender, about 20 minutes.

2. Melt 1/2 stick butter in frying pan. Saute onion in butter until tender, over medium heat, about 10 minutes. Add vegetables according to cooking time. Put carrots in first, with onions. Add corn and/or peas at end of cooking onions or after meat has intitally cooked.

3. Add ground beef and saute until no longer pink. Add salt and pepper. Add worcestshire sauce. Add 1/2 cup beef broth and cook, uncovered, over low heat for 10 minutes, adding beef broth to keep moist. ***If you decide to add gravy, do it now and mix everything well.

4. Mash potatoes in bowl with remaining butter and seasoning

5. Place beef/veggie mix in baking dish. Potatoes spread on top. Rough the potatoes up with a fork to create peaks.

6. Cook in 400 degree oven about 30 minutes, until bubbly and brown.
