This is a classic Italian soup
- 1/2 lb dried white beans, cannellini or great northern beans
- kosher salt
- 1/4 cup good olive oil, plus extra for serving
- 1/4 lb large diced pancetta or smoked bacon
- 2 cups chopped yellow onion
- 1 cup chopped carrots
- 1 cup chopped celery
- 3 Tbsp minced garlic cloves
- 1 tsp finely ground black pepper
- 1/4 tsp crushed red pepper flakes
- 1 (28oz) can Italian plum tomatoes, in puree, chopped
- 4 cups coarsely chopped shredded savoy cabbage OR spinach
- 4 cups coarsely chopped kale
- 1/2 cup chopped fresh basil leaves
- 6 cups chicken stock
- 4 cups sourdough bread cubes, crust removed
- 1/2 cup freshly grated parmesan, for serving

- 12 oz pkg chocolate chips
- 1/2 tsp salt
- 3 1/2 cups corn flakes

1. heat oil in a large skillet over med-hi heat
- 2 Tbsp olive oil
- 4 oz pancetta, chopped
- 1 2lb kabocha or butternut squash, peeled, seeded and cut into 1/2 inch pieces
- 1 small onion, chopped
- 2 cloves garlic, chopped
- kosher salt and fresh ground black pepper
- 2 cups low sodium chicken broth
- 12 oz fettucine or linguine
- 1/4 cup finely grated pecorino romano, plus shaved for serving
Carrot Frittelle

- 1/4 cup unsalted butter, chopped
- 1 cup all-purpose flour, sifted
- 4 eggs, beaten
- 1 1/4 cups heavy cream
- 1 Tbsp confectioners' sugar, sifted

- 2 oz semisweet chocolate, melted

1. Adjust oven rack to middle position and heat oven to 200 degrees
- 4 (6-8 ounce) boneless, skinless chicken breasts, trimmed
- 1/2 cup 1 tsp cornstarch
- 2 large eggs
- 2 Tbsp milk
- 1 cup chicken broth
- 1/2 cup dry white wine
- salt and pepper
- 6 Tbsp unsalted butter, cut into 6 pieces
- 2 Tbsp capers, rinsed
- 1 garlic clove, minced
- 2 Tbsp lemon juice

Classic recipe from "The Joy of Cooking"
- 2 large tomatoes, ripe
- 1 large sweet green pepper (You can sub with red bell if you like)
- 1 clove garlic
- 1/2 cup or more fresh mixed herbs; chives, parsley, basil, chervil, tarragon (your choice)
- 1/2 cup extra virgin olive oil, best quality
- 3 Tbsp lemon or lime juice
- 3 cups chilled consomme or light beef stock
- 1 sweet spanish onion, peeled and thinly sliced
- 1 cup cucumber, peeled, seeded, diced or grated (don't peel if using english cucumber)
- 1 1/2 tsp salt
- 1/2 tsp paprika
- 1/4 cup chilled ice water OR 2 ice cubes
- 1 Tbsp chopped parsley
Black Bean Soup

This soup comes from The Silver Palate shop, from Manhattan, in the late 70's
- 1 cup olive oil
- 3 cups diced yellow onions
- 8 garlic cloves, peeled and crushed
- 2 pounds black turtle beans, soaked in water overnight
- 1 meaty han bone or smoked ham hock
- 6 quarts water
- 2 Tbsp plus 1 tsp ground cumin seed
- 1 Tbsp dry oregano
- 3 bay leaves
- 1 Tbsp salt
- 2 tsp fresh ground black pepper
- pinch of cayenne pepper
- 6 Tbsp chopped parsley
- 1 medium size sweet red pepper, diced
- 1/4 cup dry sherry wine
- 1 Tbsp brown sugar
- 1 Tbsp lemon juice
- 1-2 cups Creme Fraiche or sour cream
Clean Eating - Oatmeal Cookies

1. Pre heat oven to 375 2
- 1 1/2 cup uncooked rolled oats
- 3/4 cup all-purpose flour
- 1/4 tsp cinnamon
- 1.4 tsp baking soda
- pinch salt
- 1/2 cup maple syrup
- 1/4 cup safflower, grape seed or other neutral oil
- 1/4 tsp vanilla
- 1 Tbsp ground flaxseed
- 3/4 about 3/4 of medium banana (the riper the better)
- 1/2 cup raisins (optional, or nuts or choc chips)
