Paleo Chewy Ginger Molasses Cookies

1. Preheat oven to 350 degrees
- 1 cup almond butter
- 3 Tbsp unsulphured molasses
- 2 large eggs, room temperature
- 2 tsp fresh grated ginger root OR 1 1/2 tsp ground ginger
- 3/4 cup coconut sugar
- 1/4 cup coconut flour
- 1 tsp baking soda
- 1/2 tsp ground ginger
- 3/4 tsp ground cinnamon
- 1/4 tsp ground allspice
- 1/2 tsp sea salt
Scallops with Fennel Grenobloise

1. In a large nonstick skillet, heat the olive oil
- 2 Tbsp extra virgin olive oil
- 1 pound sea scallops
- kosher salt and freshly ground pepper
- 2 Tbsp unsalted butter
- 1 medium fennel bulb, trimmed, halved and thinly sliced, fronds reserved for garnish
- 2 Tbsp capers, drained
- 2 Tbsp fresh lemon juice, plus lemon wedges for serving

- 1/2 cup butter, softened

- 1 cup soy OR almond milk
- 1 tsp apple cider vinegar

- 1 tsp vanilla extract
- 1/2 tsp chocolate extract OR almond extract OR extra vanilla extract

- 1/3 cup cocoa powder, regular OR dutch processed
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup creamy peanut butter, salted, room temp
- 1/3 cup vegan butter (Earth Balance), room temp
- 1 cup powder sugar
- drops vanilla extract
- 3 Tbsp non-dairy milk, almond, rice or soy

- 1/2 cup Pecorino Romano cheese, grated (You can sub with Parmesan)
- 2 garlic cloves, minced
- 2 Tbsp Italian parsley
- 1 Tbsp fresh mint

Coconut Chicken Curry in the Slow Cooker

This is an Indian style curry, cooked in a Crock Pot
- 2 lb chicken
- 1 whole onion, peeled and halved
- 2 clove galic, peeled
- 1 bell pepper, seeded and quartered
- 1 can tomato paste
- 1 can coconut milk
- 1 1/2 tsp salt
- 1 tbsp curry powder
- 1 tbsp garam masala
- 2 dry red chili peppers* (if you want spicy)
- 2 tbsp water
- 1 1/2 tbsp cornstarch

Leek or Onion Pie

This savory pie is amazing! One of my favorites! You can use Leeks or Onions
- Pie Dough (9 inch pie pan size)
- 2- 2 1/2 lbs Leeks or Onions (Bermuda, Maui, Vidalia)
- 3 Tbsp butter (you can substitute extra virgin olive oil)
- 4 eggs, 3 for the pie + 1 slightly beaten egg white for brushing the crust)
- 1 cup cultured sour cream OR Greek Yogurt
- 1 tsp salt
- 1/4 tsp fresh ground pepper
- 1 Tbsp fresh herb, minced OR 1 tsp dry dill or celery seed
- 4-5 strips of bacon, diced (You can cheat and make dicing the bacon easier, by cooking halfway. Just remember that your bacon will be well cooked while the pie is baking. It's still delicious this way)

- 1/2 cup warm water (about 110 degrees F)
- 3 cups bread flour
- 2 medium shallots, very thinly sliced
- 2 Tbsp chopped fresh dill
- 2 tsp dill seeds
- 1 tsp caraway seeds
- 1 tsp fennel seeds
- 1 tsp sesame seeds
- 3 Tbsp honey
- 1 Tbsp blackstrap molasses
- 1 Tbsp wheat germ
- 2 tsp kosher salt
- 1/2 tsp black pepper

- 2 Tbsp sugar
- 1/3 cup butter, melted
- Filling:
- 1 cup sugar
- 1/4 cup cornstarch
- 2 eggs
- 1 egg yolk
- 2 1/2 cups 2% milk, divided
- 1 1/2 tsp vanilla extract
- 1 cup semisweet chocolate chips
- 2/3 cup heavy cream
- 2 Tbsp powdered sugar
- 1 Tbsp dark rum
- 1 oz semisweet chocolate, shaved
