Pumpkin Bread - Paleo

You can substitute butternut squash or sweet potato in this recipe
- 1 cup almond butter, room temp
- 3 large eggs, room temp
- 1/2 cup pureed pumpkin
- 1/4 cup raw honey
- 4 Tbsp butter, room temp
- 1/2 cup coconut flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ground ginger
- pumpkin seeds to garnish
Castagnole - Italian Carnival Cookies/Fritters

These Italian Carnival Cookies are named after the Italian Castagna, or chestnut
- Castagnole:
- Recipe Yields 60-80 castagnole, depending on size.
- 1 1/2 cups all purpose flour
- 1/4 cup granulated sugar
- 1/8 tsp salt
- 1 tsp baking powder
- 1/2 cup butter, room temperature
- 2 large eggs, lightly beaten
- 2 Tbsp liquor, rum, anise, etc (you can substitute extract)
- zest of 1/2 a lemon, finely chopped
- oil for frying (2 inches deep in pot)
- confectioners or granulated sugar to dust the castagnole
- Pastry Cream Filler:
- 2 cups whole milk
- 2 cups heavy cream
- 1 cup granulated sugar
- 4 whole eggs
- 4 egg yolks
- 1 vanilla bean
- 2 Tbsp cornstarch

Taco Seasoning

Don't ever buy taco seasoning again, at the market
- 1 tbsp flour
- 1 tsp chili powder
- 1 tsp paprika
- 3/4 tsp salt
- 3/4 tsp minced onion
- 1/2 tsp cumin
- 1/4 tsp cayenne
- 1/4 tsp garlic powder or granulated garlic
- 1/4 tsp sugar
- 1/8 tsp ground oregano
Bread Salad Tuscan Style (Panzanella)

This is a classic Tuscan bread salad
- For the Vinaigrette:
- 8 oz day old Italian bread, about 1/2 of a loaf, torn or cut into large pieces
- 2 pounds ripe tomatoes, large dice
- 1/2 cup thinly sliced Tropea (red torpedo) onions, or a sweet onion, like maui, vidalia or red
- 1 pound english cucumbers, halved lengthwise and cut into large dice (if using celery, use
- same amount and slice thick, then dice
- 1 cup fresh basil leaves, packed, torn into large pieces (you can sub Italian parsley)
- kosher salt to taste
- fresh ground pepper to taste
- 2 Tsp finely grated lemon zest
- 1/4 cup fresh squeezed lemon juice (1 to 2 lemons)
- 6 anchovies, finely chopped, (or 1 Tbsp anchovy paste)
- 3 medium garlic cloves, finely chopped
- 1 tsp kosher salt
- 1 tsp fresh ground black pepper
- 3/4 cup BEST QUALITY extra-virgin olive oil (the best quality makes a huge difference)
Paleo Chocolate Cherry Coconut Bark

Since dry cherries are used, you can essentially make this bark with ANY dried fruit
- 1 cup coconut oil, softened
- 1/2 tsp pure vanilla extract
- 1/8 tsp pure almond extract
- 2 Tbsp chopped, dried unsweetened cherries (or as much as you like)
- 1 Tbsp mini chocolate chips or dark chocolate shavings (or as much as you like)
- pinch sea salt
- for color, few drops of beet juice
- You can also use different flavored extracts to help flavor the coconut oil (I use 1-2 tsp cherry extract in this recipe to help flavor)
Vegan Cornbread

1. preheat the oven to 400 degrees F
- 1 1/4 cups AP flour (white whole wheat flour works as well)
- 1 cup yellow corn meal
- 2/3 cup granulated sugar
- 1 tsp salt
- 1 Tbsp baking powder
- 1 1/4 cup unsweetened almond milk
- 1/3 cup canola oil (you can substitute the oil for applesauce)
- **I like to add chopped roasted jalapeños, roasted red bell peppers and caramelized onions. If you add any ingredients that add moisture, then add an additional 1/8 cup of flour and cornmeal

- 3 oz carrot
- 2 oz shitake mushroom, dried and reconstituted (15-60 min)
- 3 oz thin slice beef sirloin
- 2 oz spinach
- pinch of minced garlic
- green onions, sliced, optional
- 1 Tbsp veg oil
- 1/4 tsp salt and pinch black pepper
- 1/4 cup soy sauce
- 2 Tbsp sugar
- 1 tsp mince garlic
- 2 Tbsp sesame oil
- 1 tsp sesame seeds
- 1/4 tsp black pepper

- 1 cup milk
- 1 1/2 lb. of ground meat (your choice, I usually mix two)
- 2 slightly beaten eggs
- 1/4 cup onion, grated or diced small
- 1/8 tsp pepper
- 1 tsp salt
- 1/2 tsp sage
- 2 tsp worcestershire sauce
- 1 can tomato sauce ( I use my own sauce)
