- 1/3 cup dark brown sugar

- 2 cups diced tomatoes (about 4 medium tomatoes)
- 1/4 cup tomato sauce
- 1/4 cup chopped basil
- 1/4 cup olive oil
- 1 teaspoon white vinegar
- 2 teaspoons minced garlic
- 3/4 teaspoon ground black pepper
- 1/2 teaspoon salt
- Chicken Marinade
- 2 cups water
- 1 tablespoon salt
- 1/2 teaspoon paprika
- 1/4 teaspoon liquid smoke

- 3 large egg whites, room temperature
- 2 1/2 cups powdered sugar, divided
- 1/2 cup unsweetened cocoa powder
- 1 tablespoon cornstarch

Preheat oven to 375ºF. Mix together the peanut butter, brown sugar, and egg
- Makes about 30 little cookies
- 1 cup creamy peanut butter
- 1 cup packed brown sugar
- 1 egg
- Granulated sugar for rolling
- Hershey Kisses for topping (I used dark chocolate Kisses. For something more strictly dairy-free, just use some chunks of dairy-free chocolate)
Tangy GREEK ROASTED Potatoes

Preheat oven to 400 degrees F (200C) Cut potatoes into wedges
- 2 cups vegetable stock
- 1/4 C grape seed oil
- 3/4 C water
- 2 Tablespoons freshly squeezed lemon juice
- 1 tablespoon oregano
- 8 large garlic cloves, minced
- 8 small (3″ x 2″) Russet potatoes
- 1/2 teaspoon sea salt
- 1/2 teaspoon pepper
- 2 tablespoons lemon juice + 1 tablespoon water, reserved
- 2 tablespoons fresh minced parsley (garnish)
- 2 tablespoons crumbled feta (optional, garnish)
The Eggplant Burger

To make the burgers, preheat your oven to 450°F
- 2 tsp olive oil, plus more to brush on eggplant before roasting
- 1 red onion, diced
- 1 (14-oz) can cannellini beans
- 1/4 cup diced green bell pepper
- 1/2 eggplant (should equal about 1 cup)
- 1/4 cup chopped fresh parsley
- 1 tbsp pine nuts
- 1 clove of garlic, crushed
- 1 tsp sea salt
- 1 tsp ground cumin
- 1/2 cup classic hummus (or your favorite flavor hummus)
- 1 cup panko breadcrumbs
- Tomato, sliced for topping (optional)
- Lettuce, for topping (optional)
Fresh Cherry Pie

In a large saucepan, combine sugar and cornstarch; gradually stir in cherry juice until smooth
- 1-1/4 Cups Sugar
- 1/3 Cup Cornstarch
- 1 Cup Cherry Juice blend
- 4 cups fresh tart cherries, pitted or frozen pitted tart cherries, thawed
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp almond extract

- 1 medium onion thinly sliced & chopped (I used a mandolin)
- 2 tsp fresh thyme – chopped
- 1 tsp sugar
- 1 tsp salt
- 1 tsp pepper
- 1/3 cup all purpose flour
- 2 1/2 cups fat free milk
- 1/2 cup light sour cream
- 3 Tbsp grated parmesan cheese
