- 5 pounds chicken leg quarters (8 to 10)
- 4 carrots, cut into thirds, plus 1 cup diced
- 3 onions, cut into large pieces, plus 1 cup chopped
- 2 celery stalks, cut into thirds, plus 1/2 cup chopped
- 6 cloves garlic, peeled and smashed
- 6 sprigs fresh thyme
- Leaves from 1 large sprig fresh rosemary
- 2 bay leaves
- 8 cups chicken stock or canned low- sodium chicken broth
- 4 cups water
- 1 tablespoon plus 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon crushed red pepper
- 3 cups all- purpose flour, plus more for dusting
- 1 teaspoon baking powder
- 1/3 cup chopped mixed fresh herbs such as parsley, thyme, oregano, and chives
- 1/2 cup plus 3 tablespoons vegetable shortening
- 1 cup whole milk
- 1 tablespoon unsalted butter
- 2 cups frozen green peas
My Mom's Potato Salad

Boil potatos with jackets on about 1 hour
- 8 Medium size potatos
- 2 Medium size onions chopped
- 6 Pieces celery chopped
- 5 small dill pickles chopped
- 2 Tbsp dill pickle juice
- 4 hard boiled eggs
- Juice from 1 lemon
- 1 cup Hellmans mayonaise
- salt
- pepper
- season salt

- 1 cup Light Brown Sugar
- 1/2 cup Granulated Sugar
- 1 1/2 stick Butter (softened)
- 1/2 cup Natural Peanut Butter (chunky)
- 1 Egg (room temperature)
- 1 cup All-Purpose Flour
- Baking Soda
- 1/4 teaspoon Baking Powder
- pinch of Salt
- 1 cup Milk Chocolate M&M's
- Flaked Sea Salt (for sprinkling)
Old Fashioned Rye Bread

Place all ingredients in the order listed inth the bread maker; close lid
- 1 cup water
- 1/4 cup juice from a jar of dill pickles
- 2 tablespoons olive oil
- 1 tablespoon honey
- 3 teaspoons vital wheat gluten
- 1 tablespoon caraway seeds
- 2 teaspoons kosher salt
- 1 cup whole grain rye flour
- 1/2 cup 100% whole wheat flour
- 1 1/2 cups unbleached bread flour
- 1 1/2 teaspoons bread machine yeast
Banana Pudding

Preheat oven to 350 Mix 1/2 cup sugar flour and salt in top of double boiler
- 3/4 cup sugar
- 1/3 cup flour
- dash salt
- 3 eggs separated
- 2 cups milk
- 1/2 tsp vanilla
- 45 Vanilla Wafers divided
- 5 bananas sliced
Matzo Sponge Cake

Separate eggs. Beat yolks til creamy in a large bowl on high speed
- 8 eggs separated
- 1 1/2 Cups sugar
- Juice of 1 lemon
- 1 Cup sifted Matzo Cake Flour
- 1/4 tsp salt
- sifted powdered sugar for top of cake if desired
Granny's Apple Pie...

Line bottom of oven with foil for easy clean up
- Cut together:
- Granny's Apple Pie
- 5 or 6 apples, tart sweet…Rome, Jonathan, McIntosh
- 1/4 cup sugar, if using brown sugar 1/2 cup
- 1/2 tsp cinnamon
- Dash nutmeg
- 2 Tbsp flour
- 1 pat butter, 1 Tbsp
- Pie dough
- 5 1/2 cups flour
- 1 lb butter or shortening
- 1 1/2 tsp salt
- In a 1 cup measuring cup add:
- 1 Tbsp apple cider vinegar
- 1 egg
- Blend and fill to the top with water
- Add to flour mixture. Makes 3 double crust pies. Separate into 6 equal balls. Pie Crust freezes well, for up to 6 months.
