In a small bowl, combine flour, butter, and powdered sugar
- 1 cup flour
- 1 /4 cup powdered sugar
- 1 / 2 cup butter or margarine
- 2 eggs
- 1 cup sugar
- Dash of salt
- 2 1 /2 tablespoons lemon juice
- 1 /2 teaspoon baking powder

To make the burgers, preheat your oven to 450°F
- 2 tsp olive oil, plus more to brush on eggplant before roasting
- 1 red onion, diced
- 1 (14-oz) can cannellini beans
