Tomato, Cucumber, and Quinoa Salad

1.Cook the quinoa according to the package directions; let cool
- 1/2 cup quinoa
- 3 tablespoons olive oil
- 2 tablespoons sherry vinegar or red wine vinegar
- kosher salt and black pepper
- 1/2 pound tomatoes, cut up
- 1/2 English cucumber, sliced
- 4 cups baby arugula (about 3 ounces)

For the sausage gravy Cook the sausage until browned

- 16 oz. sausage
- 1/4 cup flour
- 3 cups milk
- Black pepper to taste

- 1 pound lean (at least 80%) ground beef
- 1 can (16 ounce)Old El Paso® refried beans
- 1 jar (16 ounce)Old El Paso® Thick 'n Chunky salsa

- 2 1/2 cups coarsely broken tortilla chips

- 3/4 tsp. dried basil
- 1/3 cup soy sauce
- 1/3 cup ketchup
- 1/4 cup honey

Mix together the milk and yeast
- For the tops:
- 1/3 cup milk (cold is fine, warm would help it rise faster)
- 1 scant tablespoon instant dry yeast
- 1/2 cup brown sugar
- 1/4 cup olive oil
- 1/4 cup (1/2 stick) butter, melted and slightly cooled
- 2 large eggs, lightly beaten
- An 8 oz. can crushed pineapple, NOT drained (about 2/3 cup)
- 4 cups bread flour (all-purpose would also work)
- 1 teaspoon salt
- 1 egg
- 1/4 cup water
- A few tablespoons melted butter
