LOW FAT CHEESEBURGER PIE!!!

Preheat oven to 350. Brown the turkey in a large skillet with the onions and garlic
- 1 pound extra lean ground turkey
- 1 cup fat-free cottage cheese
- 1 egg
- 1/2 cup chopped onion
- 1 clove garlic, chopped
- 3/4 cup shredded reduced-fat Cheddar cheese
- 1 tablespoons Worcestershire sauce
- 1/4 cup water
- 3/4 cup of Heart Smart Bisquick (mix only)
- 4 slices tomato
Pumpkin Bread with Cream Cheese Icing

1. Preheat the oven to 350°F
- Bread:
- 1 (15-oz.) can pumpkin puree
- 4 eggs
- 1/2 cup vegetable oil
- 1/2 cup applesauce
- 2/3 cup orange juice
- 2 tsp. vanilla
- 1 cup sugar
- 1 cup light brown sugar, lightly packed
- 3-1/2 cups all-purpose flour
- 2 tsp. baking soda
- 1-1/4 tsp. salt
- 1-1/2 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1/2 tsp. ground cloves
- 1-1/2 tsp. ground ginger
- Icing:
- 3 (8-oz.) packages cream cheese, softened
- 1 stick (4-oz.) margarine, softened
- 1 (16-oz.) box confectioners' sugar, sifted
- 1-1/2 tsp. vanilla extract
- 1 Tbsp. fresh lemon juice

- 1/4 Cup warm water

- 1 cup Libby's Pure Pumpkin
- 1/3 cup granulated sugar
- 1 large egg
- 1 tsp pumpkin pie spice
- 2/3 cup light corn syrup
- 1/2 cup granulated sugar
- 2 large eggs
- 3 Tbsp butter
- 1/2 tsp vanilla
- 1 cup pecan halves
Panera Bread Pesto Chicken Sandwich With Arugula

1. Heat grill or skillet to medium-high
- 2 large boneless skinless chicken breast halves (about 1 pound total)
- 1/2 cup prepared basil pesto, preferably refrigerated
- 1 loaf Panera Bread Ciabatta
- 1/4 cup soft goat cheese or additional pesto
- 1 ounce baby arugula leaves (about 1 packed cup)
- 1 scallion (green part only), finely chopped
- 3/4 cup roasted red bell peppers
- Oil for coating grill grate
Mexican Bean Dip

- 1 large can refried beans
- 1 lb lean ground beef, browned in dry taco seasoning
- 1 large sour cream
- 1 small jar salsa
- 1 cup Guacamole
- 1 lb cheddar cheese, grated
Caramel Apple Pie

Preheat the oven to 425º
- Filling:
- 6 cups of apples, peeled and sliced (I used 3 McIntosh and 3 Jonathan)
- 1/4 cup brown sugar
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/8 teaspoon allspice
- 2 tablespoons flour
- 2 tablespoons cornstarch
- Topping:
- 1/2 cup flour
- 1/4 teaspoon cinnamon
- 2 cups oats
- 3/4 cups roughly chopped pecans
- 1 teaspoon salt
- 1/2 cup brown sugar
- 1 stick cold butter
- (1/2 batch of this topping will cover the top adequately. It's up to you if you want a tower of crunchy awesomeness on top or not)
- Caramel Sauce
- 1 cup sugar
- 1/4 cup light corn syrup
- 6 tablespoons butter
- 6 tablespoons heavy cream

- 1 1/2 cups unsalted butter, softened
- 2 cups sugar
- 6 eggs
- 1 15oz can pure pumpkin
- 1 tsp vanilla
- Glaze
- 2 Tbsp unsalted butter, softened
- 1 3oz pkg cream cheese, softened
- 1 tsp vanilla
- 3/4 tsp ground cinnamon
- 1 1/4 cups powdered sugar, sifted
- 2 to 3 Tbsp heavy whipping cream
- 1/3 cup coarsely chopped walnuts
My Moms Meatloaf
