Coconut Lime Bars

Preheat oven to 325 degrees F
- Crust
- 5 ounces animal crackers
- 3 tablespoons packed brown sugar
- 1/8 teaspoon salt
- 4 tablespoons unsalted butter, melted and cooled slightly
- Filling
- 2 ounces cream cheese , room temperature
- 1 tablespoon grated lime zest
- 1/8 teaspoon salt
- 1 (14-ounce) can sweetened condensed milk
- 1 egg yolk
- 1/2 cup fresh lime juice (don't be tempted to use bottled lime juice)
- Topping
- 3/4 cup sweetened shredded coconut , toasted until golden and crisp

In a large skillet, heat the oils over medium-high heat
- 1 tablespoon vegetable oil
- 1 tablespoon sesame oil
- 2 pounds boneless, skinless chicken breast, cut into 1/2-inch pieces
- 1 bunch broccoli, cut into florets
- 1 package shiitake mushrooms
- 2 to 3 carrots, thinly sliced
- 1 red bell pepper, chopped
- 1 cup onion, diced
- 1 (8-ounce) can sliced water chestnuts, drained
- 1 cup chicken broth
- 1/4 cup hoisin sauce
- 1 tablespoon soy sauce
- 1 teaspoon powdered ginger
- 2 tablespoons cornstarch

- 1 tablespoon vegetable oil

Place pork shoulder in the crock of a slow cooker
- Pulled Pork:
- 1 (2-3 pound) pork shoulder
- 1 large onion, thinly sliced
- 4 teaspoons chili powder
- 1 teaspoon salt
- 3 cloves minced garlic
- 1 cup chicken stock
- 4 teaspoons freshly squeezed lime juice
- 1 cup barbeque sauce
- Green Chili Cheese Sauce:
- 4 tablespoons unsalted butter
- 4 tablespoons all-purpose flour
- 2 cups whole milk
- 1 (10 oz.) can chopped green chilies, drained
- 2 cups grated sharp cheddar cheese

Bring a pot of salted water to a boil and cook the pasta until nearing al dente, but not fully cooked; drain

- 1 teaspoon dry mustard, or to taste
- 1/4 teaspoon ground cayenne pepper
- 2 cups grated sharp Cheddar cheese
- 1 cup grated Gruyere cheese
- 1 cup, plus 1/2 cup grated Parmesan cheese
- 1 cup milk
- 1/4 cup heavy cream
- 1 1/2 cups panko (Japanese) bread crumbs
- 2 tablespoons chopped fresh flat-leaf parsley
- 6 slices bacon, cooked, reserve 1/4 cup rendered bacon fat
- 1/4 cup unsalted butter
- 1/4 cup flour
- 3 cups hot whole milk
- 1/4 teaspoon nutmeg
