Chicken Spaghetti Casserole

Cook spaghetti according to package directions
- 8 ounces uncooked spaghetti, broken into 3-inch pieces
- 3 cups cubed cooked chicken
- 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
- 1 medium onion, chopped
- 1 cup 2% milk
- 1 cup (4 ounces) shredded sharp cheddar cheese, divided
- 1 cup (4 ounces) shredded Swiss cheese, divided
- 1 can (4 ounces) mushroom stems and pieces, drained
- 1/2 cup chopped roasted sweet red peppers
- 3 tablespoons mayonnaise
- 1-1/2 teaspoons steak seasoning
- 1/2 teaspoon dried basil
Potato Nugget Nachos

Heat oven to 450°F. Line 17x12-inch half-sheet pan with foil
- 1 bag (32 oz) frozen potato nuggets
- 2 teaspoons Old El Paso® taco seasoning mix (from 1.25-oz package)
- 2 cups shredded Mexican cheese blend (8 oz)
- 2 tablespoons chopped fresh cilantro
- 1 jar (16 oz) Old El Paso® Thick 'n Chunky salsa
- 1/2 cup sour cream
Easy Peach Pie

Fresh peach pie with a lattice crust is a perfect summer dessert when peaches are ripe
- 2 (9-inch) pie crusts, unbaked, your favorite recipe or store bought
- 8 to 10 medium-sized, ripe peaches, peeled and sliced
- 1 cup sugar
- 1 tablespoon cornstarch
- 1 1/2 teaspoons cinnamon
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- Pinch of salt
- 3 to 4 tablespoons butter
- 2 teaspoons sugar, optional
Easy No-Churn Oreo Ice Cream

- 2 cups heavy whipping cream
- 1 (14-ounce) can sweetened condensed milk
- 2 teaspoons vanilla extract
- 20 Oreo cookies coarsely crushed
Amanda's Cheese Pound Cake

Preheat oven to 300°F. Cream butter, cream cheese and sugar together
- 1 1/2 cups butter
- 1 (8 ounce) package cream cheese, softened
- 3 cups sugar
- 6 eggs
- 3 cups flour
- 1 teaspoon vanilla
Cabbage Soup

Turn instant pot to saute mode and brown the stew meat with a small amount of olive oil
- 1 - 1.5 pounds stew beef
- olive oil for browning meat
- 1 can diced tomatoes 14 ounces not drained
- 1 can green beans 14 ounces drained
- 1 can plain tomato sauce 14 ounces
- 2 large russet potatoes small diced
- 2 cups carrots small diced
- 2 - 3 beef bouillon cubes or we used Better than Bouillon during the live show
- 1 teaspoon seasoned salt
- 1 small/medium head of cabbage rough chopped
- water to cover meat and vegetables
Sour Cream Potatoes

- 10 medium red potatoes, peeled and quartered
- 1 package (8 ounces) cream cheese, cubed
- 1 cup (8 ounces) sour cream
- 1/4 cup 2% milk
- 2 tablespoons butter, divided
- 1 tablespoon dried parsley flakes
- 1-1/4 teaspoons garlic salt
- 1/4 teaspoon paprika

- 16.25 16.25 ounce white or yellow cake mix not a cake mix with pudding in it
- 3 1/2 ounce package vanilla instant pudding
- 1 1/2 cups water
- 4 eggs slightly beaten
- 1/2 cup vegetable oil
- 1 1 cup chopped pecans
- 2 2 cups flaked coconut
- Frosting Ingredients
- 3 TBLS butter softened
- 6 ounces cream cheese softened
- 1 -2 TBLS cream if needed
- 2 1/2 cups confectioners sugar
- 1 1/2 cups flaked coconut
Tex-Mex Chicken Enchiladas

- 2 (10-ounce) cans enchilada sauce
- 2 tablespoons cocoa powder
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 4 cups shredded cooked chicken
- 3 cups shredded Monterey jack cheese, divided
