Apple Fritters

1.Mix flour, sugar, and cinnamon together using a fork to break up any lumps
- FRITTERS:
- 2 cups apples, peeled and diced
- 2 cups self rising flour
- 1/2 cup brown sugar
- 2 large eggs
- 1 cup milk
- 3 Tbsp. melted butter
- 1 tsp cinnamon
- CROCK POT APPLE BUTTER:
- 2- 3 lb (50 oz) jars unsweetened apple sauce
- 3 lbs granny smith apples
- 4 cups sugar
- 1 1/2 cups apple juice
- 2 tsp cinnamon
- 1 tsp cloves
- 1 tsp allspice
Weeknight Pepper Steak

Quick and easy weeknight dinner your family will love
- 1 package brown gravy mix
- 3/4 cup cold water
- 1 tablespoon soy sauce
- 1/2 teaspoon ginger, ground
- 1 tablespoon vegetable oil
- 1 pound boneless beef sirloin steak, cut into thin strips
- 1 small onion, cut into thin wedges
- 1 medium green or red bell pepper (or 1/2 of each), cut into thin
- strips
- Cooked rice (optional)
Cinnabon Rolls

Microwave milk for 45-60 seconds in the microwave
- Filling:
- 1 cup warm milk
- 2 eggs, room temperature
- 1/3 cup butter, melted
- 4 1/2 cups bread flour or regular flour (bread flour makes for a lighter cinnamon roll)
- 1 teaspoon salt
- 1/2 cup white sugar
- 1 pkg yeast (1/4 ounce)
- 1 cup brown sugar, packed
- 2 1/2 tablespoons ground cinnamon
- 1/3 cup butter, softened
- Icing:
- 3 oz cream cheese, softened
- 1/4 cup (4 tablespoons) butter, softened
- 1 1/2 cups confectioners' sugar
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
Creamed Spinach

Heat oven to 375°F. Butter 8" square baking dish
- 1/4 c unsalted butter
- 1/2 red onion, chopped
- 2 cloves garlic, minced
- 1/4 tsp red pepper flakes
- 1/4 tsp kosher salt
- 1 3/4 c heavy cream
- 1 c shredded Parmesan
- 1 tsp ground nutmeg
- 1/2 c sour cream
- 10 oz frozen, chopped spinach, thawed, squeezed dry
- 1/4 tsp pepper
- 1/2 c French fried onions, optional
Tomato-Feta Frittata

Heat the oven to 400°F. Heat a greased oven-safe 10-inch skillet in the oven for 5 minutes
- 7 eggs
- 1/2 cup water
- 1 cup cooked regular long-grain white rice
- 3 ounces crumbled feta cheese (about 3/4 cup)
- 2 ounces shredded Cheddar cheese (about 1/2 cup)
- 1/2 cup Pace® Picante Sauce
- 2 tablespoons chopped fresh cilantro leaves
- 1/2 teaspoon dried oregano leaves, crushed

In a large bowl, combine the cream cheese, mayonnaise, onion and garlic until blended
- 2 packages (8 ounces each) cream cheese, softened
- 2 cups mayonnaise
- 1/4 cup finely chopped onion
- 4 garlic cloves, minced
- 1 jar (7 ounces) oil-packed sun-dried tomatoes, drained and chopped
- Two thirds cup chopped roasted sweet red peppers
- 2 cups (8 ounces) shredded part-skim mozzarella cheese
- 2 cups (8 ounces) shredded Italian cheese blend
- 1 cup shredded Parmesan cheese, divided
