Creamy Balsamic Chicken

- 4 boneless, skinless chicken breast halves (about 1-1/4 lb.)
- 1/2 cup water
- 1/2 cup Hellmann’s® or Best Foods® Creamy Balsamic Mayonnaise Dressing
- 2 Tbsp. sliced kalamata olives
- 2 Tbsp. chopped sun-dried tomatoes
- 1 Tbsp. chopped fresh parsley leaves

For the crumbs: Heat the oven to 350 degrees Fahrenheit
- Chocolate Crumbs:
- 2/3 cup white whole wheat flour
- 1 teaspoon cornstarch
- 1/2 cup granulated sugar
- 2/3 cup cocoa powder
- 1 teaspoon kosher salt
- 6 tablespoons unsalted butter, melted
- Chocolate Chip Cake:
- 6 tablespoons unsalted butter, at room temperature
- 1 cup granulated sugar
- 1/4 cup light brown sugar, tightly packed
- 3 eggs
- 1/2 cup buttermilk
- 1/3 cup canola oil
- 1 tablespoon vanilla extract
- 1 1/2 cups all-purpose or white whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon table salt
- 1/2 cup mini chocolate chips (or regular semisweet chocolate chips, chopped into small pieces)
- Peach Puree:
- 3 medium fresh peaches (or 1.5 cans sliced peaches, in 100% juice)
- 3 tablespoons sugar
- Juice from half a medium lemon
- 1.5 tablespoons cornstarch
- Coffee Frosting:
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 1/4 cup powdered sugar
- 1/4 cup almond milk
- 3/4 teaspoon instant coffee powder (regular coffee works in a pinch)
- 1/4 teaspoon table salt

- 1 cup dried flaked coconut
- 1/4 cup cocoa powder (unsweetened)
- 2 cups sugar

- 1/2 C. lemon juice
- 1 8 or 9-inch baked pie crust or graham cracker crumb crust
