Excellent Macaroni Salad Recipe

Cook macaroni noodles according to package directions
- 4 C. macaroni, cooked
- 1 C. low fat mayonnaise
- salt and pepper to taste
- 1/2 red onion, chopped
- 1 sm. pkg. frozen peas, thawed
- 1 green pepper
- 1 C. shredded cheddar cheese
- 10-12 radishes, chopped
- 4 slices cooked bacon crumbled
Potato Salad with Green Beans and Pesto

Place the potatoes into a large saucepan, cover with cold water and add a big pinch of salt
- 2 1/2 pounds baby red new potatoes, scrubbed and cut in half
- Kosher salt
- 4 ounces fresh basil leaves (4 cups loosely packed basil)
- 1/2 cup extra-virgin olive oil
- 1/2 cup chopped pine nuts
- 1/4 cup finely grated Parmesan
- 1 large clove garlic, peeled
- Freshly ground black pepper
- 1 1/2 pounds green beans, ends trimmed, cut into half
Roast Beef with Coffee Gravy

Season the beef with salt and pepper
- 3-5 pound chuck roast
- salt and pepper to taste
- 1 tablespoon oil
- 2 onions (sliced)
- 2 cups beef broth
- 2 cups coffee
- 1 tablespoon balsamic vinegar
- 2 bay leaves
- 2 sprigs of thyme
- 1 tablespoon flour mixed into 1 tablespoon water
- salt and pepper to taste
