Dr Pepper BBQ Sauce

In a small saucepan, combine all ingredients; bring to a boil
- 1 can (12 ounces) Dr Pepper
- 1 cup crushed tomatoes
- 1/4 cup packed brown sugar
- 2 tablespoons spicy brown mustard
- 1 tablespoon orange juice
- 1 tablespoon Worcestershire sauce
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Tomatillo Spinach Enchilada Stack

Preheat oven to 400 degrees
- 1 pound cooked chicken breast, shredded (see below for more info)
- 1 (3 oz) package cream cheese, softened
- 3 garlic cloves, chopped
- 2 cans chopped green chiles
- 8-10 green onions, chopped and divided
- 3 cups fresh baby spinach (just buy a bagged spinach salad)
- 2 cups Tomatillo Salsa, divided
- 2 cups Pepper Jack cheese, shredded and divided
- 1 cup cilantro, chopped, divided (and optional if you don't care for it)
- 6-8 tortillas (I used whole wheat but you could use flour instead)
Smothered Chicken Casserole

Combine cheese soup and milk then whisk until smooth
- 4-5 medium russet potatoes
- 1 10.75-oz. can cheddar cheese soup (such as Campbell's)
- 1 1/4 cups milk
- 8-10 slices of bacon
- 8 chicken breast tenderloins (about 1.25-1.5 pounds)
- 4 ounces cheese*, shredded (about 1 cup)
- Salt & pepper
Broccoli and Bacon Salad

Combine all dressing ingredients in blender except the vegetable oil
- Salad:
- 6 cups fresh raw broccoli florets
- 1/2 cup raisins
- 2 tbsp. red onion, chopped
- 12 slices bacon, cooked and crumbled
- Dressing:
- 2 tbsp. vinegar
- 3 oz. cream cheese
- 2 tbsp. granulated sugar
- Dash of pepper
- 1/8 tsp. garlic salt
- 1/4 tsp. salt
- 1 tsp. mustard
- 1 egg
- 2 tbsp. vegetable oil
Peach Crumb Cake

Have this for dessert or for brunch, this Peach Crumb Cake is delicious
- Crumbs
- 1 1/4 cups all-purpose flour
- 1/3 cup packed light-brown sugar
- 1/3 cup granulated sugar
- 1 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon salt
- 1/2 cup unsalted butter, melted
- Cake
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 pound peaches at room temperature, peeled, cored and sliced (about 3 medium sliced into 10 slices each)
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, softened (don't melt!)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup sour cream
- 1/3 cup buttermilk
- Vanilla Glaze (optional)
- 1/2 cup powdered sugar

Three Cheese Manicotti

Prepare Homemade Manicotti Wraps (if using) or cook purchased manicotti shells according to package directions
- 1 Homemade Manicotti Wraps or 20 purchased dried manicotti shells
- 2 1/2 cups low-fat ricotta cheese (24 ounces)
- 2 cups shredded part-skim mozzarella cheese (4 ounces)
- 1/2 cup refrigerated or frozen egg product, thawed, or 2 eggs
- 1/3 cup grated Romano or Asiago cheese
- 1/4 cup snipped fresh parsley
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 4 cups Basil Tomato Sauce (see recipe center) or four 8-ounce cans no-salt-added tomato sauce plus 2 teaspoons dried Italian seasoning, crushed

- 2/3 cup fat-free milk
- 1/4 cup refrigerated or frozen egg product, thawed, or 1 egg, beaten

- 3 eggs
- 1 cup half and half or milk
- 1 1/2 cup grated cheese (any kind: Swiss, cheddar, etc.)
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 package frozen broccoli, defrosted
Snickerdoodle Monkey Bread

Heat oven to 350°F. Spray 12-cup fluted tube cake pan with cooking spray
- 1 1/2 cups sugar
- 1 tablespoon ground cinnamon
- 2 cans (16.3 oz each) Pillsbury Grands or Southern Homestyle refrigerated Buttermilk biscuits (8 biscuits each)
- 1/2 cup butter, melted
- 1 cup vanilla creamy ready-to-spread frosting

- 1/2 cup butter or 1/2 cup margarine
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper, to taste
- 1/4 teaspoon cayenne pepper, to taste
