Bang Bang Chicken Kabobs

Soak your bamboo wood skewers in water for about 15 minutes so that they don’t burn on the grill
- 3-4 boneless skinless chicken breasts cut into 1 inch chunks
- 1 red bell pepper cut into 1 inch chunks
- 1 medium yellow onion cut into 1 inch chunks
- Bamboo wood skewers
- Olive oil, salt, black pepper
- 1/4 cup mayo
- 1/4 cup Thai Sweet Chili Sauce
- 5-6 + drops of Sriracha Hot Sauce – Use this to taste- if you like things spicy, add more. If you don’t – add a few drops, then taste
- 1/4 teaspoon dried parsley
Cheesy Enchilada Pie

Preheat oven to 350 degrees F
- 1 rotisserie chicken, shredded (about 3 cups chicken)
- 1 (15 or 16 ounce) jar tomatillo salsa
- 10 to 12 (6-inch) corn tortillas
- 1 (6 ounce) bag shredded Mexican blend cheese (about 1 1/2 cups)
- 2 tablespoons canola oil
- Sour cream for serving (optional)
Bacon and Sour Cream Chicken Crockpot

Place bacon in a large skillet over low heat
- 8 slices bacon
- 8 boneless, skinless chicken breasts
- 2 10-oz. cans roasted garlic cream of mushroom soup
- 1 Cup sour cream
- 1/4 Cup flour
- salt
- pepper
Granny's Beloved Peanut Butter Bars

Preheat oven to 350 degrees
- 1 1/2 cups all-purpose flour
- 1 tsp salt
- 1/2 tsp baking soda
- 1 1/2 cups quick oats
- 3/4 cup butter (I used salted)
- 1 cup packed light-brown sugar
- 1/2 cup granulated sugar
- 1 1/2 cups creamy peanut butter, divided
- 2 large eggs
- 1 tsp vanilla extract
- Chocolate Frosting
- 1/2 cup salted butter
- 2 Tbsp cocoa powder
- 1/4 cup milk, preferably 2% or whole
- 1 tsp vanilla extract
- 3 1/2 cups powdered sugar
Chicken Souvlaki Salad

- 2 cups chicken souvlaki, warm
- 6 cups lettuce, sliced
- 2 large tomatoes, diced
- 1 large cucumber, diced
- 1/4 cup red onion, diced
- 1/4 cup kalamata olives, pitted and coarsely chopped
- 1/4 cup feta, crumbled
- 1/2 cup tzatziki sauce
Roasted Garlic Chicken Penne

Cook and drain pasta as directed on package
- 2 2/3 cups uncooked penne pasta (8oz)
- 3 cloves garlic, finely chopped
- 1 package (1 1/4 lb) boneless skinless chicken breasts, cut into thin slices
- 2 cups broccoli florets
- 1/2 cup chopped drained roasted red bell peppers (from a jar)
- 1/4 cup chopped fresh or 2 teaspoons dried basil leaves
- 1 can (18 oz) Progresso™ Recipe Starters™ creamy roasted garlic with chicken stock cooking sauce
- 2 tablespoons red wine vinegar
Better Than Cracker Barrel Meatloaf

- 1 pound ground beef
- 1 medium onion, cut into medium pieces
- 3 red tomatoes, cut into small pieces
- 4 whole eggs
- 1 teaspoon salt
- 1 teaspoon pepper
- 12 ounces plain bread crumbs
- 1 green pepper, diced
- 1/4 cup ketchup
Bread Bowl Dip

In a medium-sized bowl, mix all ingredients together except breads
- 1 pint (16 ounces) sour cream
- 1 1/3 cups mayonnaise
- 2 tablespoons dried dill weed
- 2 tablespoons dried parsley flakes
- 2 tablespoons dried minced onions
- 1 (2.25 ounces) jar sliced dried beef, chopped (about 3/4 cup)
- 2 (1 pound each) round pumpernickel breads
Crock Pot Lasagna

Brown and crumble ground beef in a large skillet
- 1 pound ground beef
- 1 small onion, finely diced
- 1 tbsp. garlic, minced
- 1 jar (26 oz.) spaghetti sauce
- 1 cup water
- 1 cup cherry tomatoes, halved (optional)
- 1 (15 oz.) container small curd cottage cheese
- 2 cups shredded mozzarella cheese, divided
- 1/2 cup grated parmesan cheese, divided
- 1 egg
- 2 tbsp. fresh parsley, chopped (optional)
- 1 teaspoon pepper
- lasagna noodles, uncooked
- salt, to taste
Deconstructed Stuffed Cabbage Casserole

Preheat oven to 350F/180C
- 1 1/2 T olive oil, divided (more or less, depending on your pan)
- 1 lb. lean ground beef
- 1 large onion, chopped small
- 1 T finely minced garlic
- 1/2 tsp. dried thyme
- 1 tsp. sweet Hungarian Paprika (good quality paprika makes a big difference in flavor in a dish like this)
- 1/2 tsp. sharp Hungarian Paprika (optional; if making for kids I might leave this out)
- salt and fresh ground black pepper to taste (for seasoning meat mixture and cooked cabbage)
- 1 1/2 heads green cabbage, coarsely chopped
- 1 can (14.5 oz.) petite dice tomatoes with juice
- 1 can (15 oz.) tomato sauce
- 1/4 cup water (just enough to rinse out each of the cans)
- 2 cups cooked rice (I used brown rice)
- 2 cups low-fat cheese (optional; I used a blend of 80% low-fat mozzarella, 10% low-fat cheddar, and 10% Provolone.)
