Chocolate Pecan Bourbon Pie

Preheat oven to 350F. Brush edges of pie shell with heavy cream
- Filling:
- 1 (9-inch) piecrust, store-bought or your favorite crust recipe
- 2 tablespoons heavy cream (to glaze the crimped pie edges)
- 3 large eggs, at room temperature
- 1/2 cup plus 1 tablespoon sugar
- 1 1/4 cups dark corn syrup
- 1/2 tablespoon pure vanilla extract
- 1 tablespoon bourbon
- 5 tablespoons unsalted butter, melted and kept warm
- 1 1/2 cups chopped pecans3/4 cup semisweet chocolate chips
Twice Baked Potato Casserole

Preheat the oven to 400 degrees F
- 1 pound thin bacon
- 16 russet potatoes
- 6 tablespoons canola oil
- 4 sticks (1 pound) salted butter, plus more for buttering baking dish
- 2 cups sour cream
- 2 cups grated Cheddar or Jack (or a mix of both), plus more for topping
- 2 cups whole milk
- 4 teaspoons seasoned salt
- 6 green onions, sliced
- Kosher salt and freshly ground black pepper
Apple Fritters

Mix flour, sugar, and cinnamon together using a fork to break up any lumps
- 2 cups apples, peeled and diced
- 2 cups self rising flour
- ½ cup brown sugar
- 2 large eggs
- 1 cup milk
- 3 Tbsp. melted butter
- 1 tsp cinnamon
Turkey Meatloaf

Preheat oven to 350 degrees
- 1 1/2 pounds ground turkey
- 3/4 cup dry stuffing mix (such as Stove Top)
- 1/2 cup milk
- 1/4 cup powdered Parmesan cheese
- 1 small onion, diced
- 1 green pepper, diced
- 1 egg
- 2 teaspoons salt
- 1 teaspoon garlic powder
- 1/2 teaspoon ground pepper
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 1 tablespoon mustard
- 1 tablespoon Worcestershire sauce
Spaghetti Pepperoni Pie

In large saucepan of lightly salted boiling water, cook spaghetti 1 minute less than directed on package
- 1/2 pound spaghetti, broken up into thirds
- One third cup dry seasoned bread crumbs
- 2 cups bottled chunky pasta sauce
- 1 cup shredded mozzarella cheese
- 4 ounces sliced pepperoni, chopped
- 4 large eggs,lightly beaten
- 3 tablespoons grated Parmesan
Pickled Watermelon Rind

Waste not, want not fits this easy recipe for pickled watermelon rind
- 9 cups water, divided
- 4 cups (1-inch) chunks peeled watermelon rind (see Tips)
- 1 cup white vinegar
- 3 1/2 cups sugar
- 3 cinnamon sticks
- 1/2 teaspoon whole cloves
Teriyaki Hens with Bok Choy

Preheat the oven to 425 degrees F
- 2 Cornish game hens (about 11/2 pounds each), halved
- Kosher salt and freshly ground pepper
- 3/4 cup low-sodium soy sauce
- 1/4 cup hoisin sauce
- 1/4 cup rice vinegar
- 1 2-inch piece ginger, peeled and sliced
- 2 small red chile peppers, halved (remove seeds for less heat)
- 1 bunch scallions
- 1 grapefruit, halved
- 1 medium head bok choy, thinly sliced
- 1 tablespoon toasted sesame oil
- 2 teaspoons sesame seeds, toasted, for garnish
Texas Oven-Roasted Beef Brisket

Combine the first seven ingredients; rub over brisket
- 2 tablespoons chili powder
- 1 tablespoon sugar
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon pepper
- 2 teaspoons ground mustard
- 1/2 teaspoon salt
- 1 fresh beef brisket (4 pounds), halved
- 1 tablespoon canola oil
- 1-1/2 cups beef broth
- 1 bay leaf
Chicken Salad

Any canned chicken will work in the recipe, but I recommend Sam's Club Member Mark canned chicken
- 2 cans chicken (see note in summary)
- seasoned salt (1/2 teaspoon)
- poultry seasoning (1/2 teaspoon)
- salt (I now use sea salt) (1/4 teaspoon)
- freshly ground pepper (1/2 teaspoon)
- celery flakes or celery seed (1/4 teaspoon)
- prepared ground mustard (3/4 teaspoon)
- real mayonnaise (1/2 cup)
- grapes (any color, seedless) (1/2 cup, halved)
- walnuts, chopped (1 cup)
Caramelized Onion Bread Pudding

Heat butter in a sauté pan over medium heat
- 2 tablespoons unsalted butter
- 2 cups thinly sliced leeks, white and yellow parts only (leeks, ramps and/or spring onions)
- 4 ounces thinly sliced shiitake mushrooms, stems removed
- 3/4 teaspoon coarse salt, divided
- 3/4 teaspoon freshly ground black pepper, divided
- 1 teaspoon brown sugar
- 1/2 teaspoon freshly grated nutmeg
- 1 (1-pound) loaf ciabbata bread, cut into 1-inch cubes (about 12 cups) 1 bunch green onions, finely chopped4 eggs
- 6 cups whole milk
- 1 1/2 cups grated Gruyère cheese
