Asian Cucumber Chicken Pasta Salad

Cook pasta according to package directions; drain and rinse in cold water
- 20 ounces Grilled & Ready® Fully Cooked Refrigerated Grilled Chicken Breast Strips
- 2 Cups spiral pasta, uncooked
- 1/4 cup white wine vinegar
- 3 Tbsp reduced-sodium soy sauce
- 2 Tbsp olive oil
- 4 tsp sugar
- 1 clove garlic, minched
- 2 tsp fresh ginger root, minched
- 2 cups mushrooms, sliced
- 1 medium cucumber, halved, sliced
- 1/2 cup carrot, julienned
- 1 medium red or yellow pepper, cut into 1/2in pieces
- 1 small onion, chopped

Leftover Pizza Breakfast Casserole

Preheat oven to 350 degrees F (175 degrees C)

- 3 slices leftover pizza, cut into 3/4-inch squares
- 4 eggs, beaten
- 1 cup milk
- 1 (8 ounce) package shredded
- mozzarella cheese
- 1/3 cup chopped onion
- 3 tablespoons butter, melted

- 1 teaspoon dried oregano

- 4 to 5 pounds pork baby back ribs

Breakfast Hashbrown Casserole

Heat oven to 450º. Spray 9x13 pan with nonstick cooking spray
- Crust
- 1 (24-ounce) package shredded hash browns, fresh or thawed
- 1/4 cup egg substitute or 1 egg, beaten
- Topping
- 1 3/4 cup egg substitute or 7 eggs, beaten
- 1/2 cup milk
- 1/4 t. salt
- 1/4 t. pepper
- 1 1/2 cups cheddar cheese, shredded
- 1 cup ham, chopped (optional)
- 1/2 cup red pepper, chopped (optional)

Taco Lasagna

In a large skillet, cook the beef, green pepper and onion over medium heat until meat is no longer pink; drain
- 1 pound ground beef
- 1/2 cup chopped green pepper
- 1/2 cup chopped onion
- 2/3 cup water
- 1 envelope taco seasoning
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (14-1/2 ounces) Mexican diced tomatoes, undrained

Enchilada Pork Pasta Casserole

Cook pork chops in the enchilada sauce a slow cooker on high for 4 hours
- 1 pkg pork chops
- 1 large can enchilada sauce
- 1 pkg shredded cheese (your favorite kind. I used sharp cheddar)
- 1 can red kidney beans in chili sauce
- 1/2 pkg whole wheat penne pasta
Broccoli Cheddar, Chicken and Tater Tot Casserole

Preheat oven to 375 degrees F
- 2 small cans cream of chicken soup
- 2 small cans cheddar cheese soup
- 1 1/2 Cups milk
- 8-10 Cups broccoli florets
- 2 large boneless skinless chicken breasts, cooked and shredded (bake or I throw mine in the pressure cooker)
- 1 teaspoon hot sauce (Tabasco or Chalula)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon fresh cracked black pepper
- 1/8 teaspoon Lawry’s Garlic Salt with Parsley
- 1/2 bag Ore Ida Seasoned Tater Tots, frozen
- 1/2 Cup shredded cheddar cheese
