Favorite Turkey Salad

Drain pineapple, reserving 2 tablespoons juice (save remaining juice for another use)
- 1 can (8 ounces) DOLE® Pineapple Chunks in 100% Pineapple Juice
- 2 cups cubed cooked turkey
- 1 medium apple, thinly sliced
- 1 cup seedless red or green grapes, halved
- 1 celery rib, thinly sliced
- 4 green onions, thinly sliced
- One third cup chopped walnuts, toasted
- 3/4 cup mayonnaise
- 1 tablespoon brown sugar
- 1 teaspoon curry powder
- 1/2 teaspoon salt
- 16 radicchio or other lettuce leaves
- 1/4 cup flaked coconut, toasted
Pepperoni Extreme Dip

Combine the first six ingredients in a 4-qt
- 4 cups (16 ounces) shredded cheddar cheese
- 3-1/2 cups spaghetti sauce
- 2 cups mayonnaise
- 1 package (8 ounces) sliced pepperoni, chopped
- 1 can (6 ounces) pitted ripe olives, chopped
- 1 jar (5-3/4 ounces) sliced green olives with pimientos, drained and chopped
- Tortilla chips
Peppered Filets with Cherry Port Sauce

- 2 beef tenderloin steaks (8 ounces each)
- 2 teaspoons coarsely ground pepper
- 1 cup dry red wine
- 1/2 cup chopped red onion
- 1/3 cup golden raisins
- 1/3 cup dried cherries
- 2 tablespoons sugar
- 1-1/2 teaspoons cornstarch

- For the Glaze:
