- 2 cups chopped plum tomatoes
- 1 cinnamon stick
- 1/2 teaspoon ground allspice
- Pinch of ground cloves
- 3 bay leaves
- 1 cup dry white wine
- Salt and pepper
- Bechamel:
- 6 tablespoons unsalted butter
- 6 tablespoons all-purpose flour
- 4 cups milk
- Salt and pinch of white pepper

- 2 egg yolks
- 1/2 cup fresh Greek anthotyro cheese (or ricotta), drained
