Cast Iron Skillet Texas Hash

Quick and easy Texas style hash with sour cream, salsa and cilantro
- 4 cups O'Brien Style frozen hash brown cubes (see note)
- 1/2 cup water
- 1 tablespoon vegetable oil
- 4 strips of bacon, chopped
- 2 cloves garlic, finely minced
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 3/4 cup prepared salsa (see note)
- 1 cup grated cheddar cheese
- Sour cream and sprigs of fresh cilantro to garnish
Golden Chicken Pot Pies

Preheat oven to 400°. In a large bowl, combine the first 11 ingredients
- 4 cups cubed cooked chicken
- 4 cups frozen cubed hash brown potatoes, thawed
- 1 package (16 ounces) frozen mixed vegetables, thawed and drained
- 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
- 1 can (10-3/4 ounces) condensed cream of onion soup, undiluted
- 1 cup milk
- 1 cup (8 ounces) sour cream
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon garlic powder
- 1 package (15 ounces) refrigerated pie pastry

- 1 (10-3/4 ounce) can reduced-fat condensed cream of mushroom soup
- 3/4 cup low-fat milk
- 1/2 cup reduced-fat sour cream
